Abstract
PURPOSE: Eel bones are crushed in two steps to form a paste, which is mixed with crushed fillets of white fish meat, and they are fried to produce a food product closely similar to fried eel from an unutilized material.
CONSTITUTION: Eel bones are sterilized by heating and crushed with a rough crusher. Then, they are crushed again into a paste. In the meantime, fillets of white fish meat is separately crushed with a rough crusher to prepare minced meat. Then, the paste of eel bone and minced fish meat are mixed at a ratio of 6/4W7/3 and stirred with a stirrer. The mixture is placed in a desired mold, e.g., a mold giving the shape of eel and stored in a refrigerator. When desired, the moldings are fried to produce the food product containing eel bones.
