Abstract

PURPOSE: To obtain a lecithin composition which is excellent in water dispersibility and is transparent by compounding ethyl alcohol and propylene glycol or glycerol to lecithin which is an essential component, as a lecithin composition.
CONSTITUTION: 1W30wt% Ethyl alcohol, and up to 40wt% propylne glycol and/or up to 30wt%, glycerol are compounded to lecithin which is an essential component, and these are uniformly mixed to prepare the lecithin composition. This lecithin composition easily disperses in water when it is added directly to water and agitated and since it is transparent and stable, it is effectively usable as an emulsifier.
