Abstract

PURPOSE: A compound edible oil having unique advantages of lard, with suppressed increase in serum cholesterol value in addition to the lard, comprising lard and corn oil.
CONSTITUTION: Lard (L) is mixed with corn oil (C) at a weight ratio of (L) to (C) of 25:75W1:99 to give an edible oil. L with a much higher saturated fatty acid content than a polyfunctional unsaturated fatty acid has a disadvantage of increasing the serum cholesterol value. The mixture of L and C at the specific ratio described above provides a remarkably reduced increase in blood cholesterol due to L, and exhibits the same effect as C alone without the linear relationship with the mixing ratio.
