Alternatively, cleaning water to which detergent or the like has been added is uniformly applied to the front and back surfaces of the contaminated tableware so as to circulate in the cleaning device. However, if tap water is used as it is, there is a problem that oil stains due to the recent westernization are hard to remove, unpleasant scum is often generated in the dishwasher due to unwashed scum, and detergents are used. Even if the added washing water is used, dirt including various components does not fall off. As a result, it is necessary to increase the use amount of the detergent to about 0.2% by weight or more. There were problems such as insufficient rinsing and a high concentration of detergent contained in the wastewater, which had an adverse effect on the environment.

Gazette), when acidic water is used as the washing liquid, the protein food hardens to coagulate,
On the other hand, when alkaline water is used as a washing liquid, there is a certain degree of washing effect, but it is not possible to wash protein foods and starch, and it is not possible to prevent reattachment of dirt. Could not be washed. Also, strong alkaline water and strong acidic water obtained by electrolysis are used as washing water, and strong alkaline water is heated to about 40 ° C.
A washing and disinfecting apparatus has been proposed in which the washing is carried out by heating the washing water to be used as washing water, and after washing, rinsing with strong acid water is carried out.
Japanese Patent Application Laid-Open No.-296572), when a strong alkaline water is used as a washing solution, there is a washing effect by saponification action of fats and oils and action of dissolving protein. However, starch cannot be washed, and reattachment of dirt cannot be prevented. Tableware to which food residue from foods containing components such as oil and starch has adhered cannot be efficiently washed.

If the pH is less than 10, the washing effect may be insufficient. The temperature after heating the strong alkaline water is not particularly limited as long as it is high and low. However, the low temperature is preferably 50 to 55 ° C. 5
If the temperature is lower than 0 ° C., the washing effect becomes insufficient. If the temperature exceeds 55 ° C., there is a risk of coagulation of the protein. In addition, when a protease, an oil-degrading enzyme, or a starch-degrading enzyme is added, the action of these enzymes is reduced. . The high temperature is preferably from 70 to 80C. If the temperature is lower than 70 ° C., the cleaning effect on rice grains may be insufficient. If the temperature is higher than 80 ° C., further improvement of the cleaning effect is difficult and uneconomical.

When washing tableware such as bowls, teacups, saji, spoons, and chopsticks, it is preferable to wash with a low-temperature washing liquid and then with a high-temperature washing liquid. Washing with a low-temperature washing solution removes protein stains and oil stains, and washing with this low-temperature washing solution has a pre-treatment effect and a soaking effect on stains such as rice grains and lipsticks, and then continues washing with a high-temperature washing solution. Thus, the problem of coagulation of protein can be avoided and dirt such as rice grains and lipstick can be sufficiently removed. Cleaning with this high-temperature cleaning solution has a bactericidal effect. In the dishwasher of the present invention, heating to a low temperature,
With a tank for storing controlled strong alkaline water and a tank for storing high-temperature, controlled strong alkaline water, keep low-temperature strong alkaline water and high-temperature strong alkaline water as needed This is preferable because the cleaning time can be shortened.

When you wash dishes such as spoons and chopsticks, you can remove protein stains and oil stains by first washing with a low-temperature washing solution, and washing with this low-temperature washing solution removes stains such as rice grains and lipstick. By having a pretreatment effect and a dipping effect, and by successively washing with a high-temperature washing solution, it is possible to avoid the problem of protein coagulation and sufficiently remove stains such as rice grains and lipstick. Washing with this high-temperature washing solution has a sterilizing effect. In addition, since strongly acidic water has a bacteriostatic action, while dishes and the like are kept more clean,
Generation of offensive odor due to food residue in the dishwasher itself is suppressed. Even if the dishes are considerably soiled, the dishes can be efficiently washed only by adding 0.2% by weight or less of an alkaline detergent, so that the concentration of the detergent contained in the wastewater is reduced. Since the washing water after washing the dishes is neutralized and drained using the strong acid water, the adverse effect on the environment can be reduced.

(Experiment) (1) Types of dirt The dirt adhering to tableware can be roughly classified into starch dirt, protein dirt, and oil dirt. Rice dirt as starch dirt, eggs as protein dirt, and salad oil as oil dirt. Lipstick was selected. Eggs were used individually as samples because it is said that coagulation temperatures differ between white and yolk. (2) Adjustment method of dirt and adhesion method Starch dirt was prepared by cooking rice with a pressure of 0.5 using a rheometer.
The sample was attached to a slide glass at kg / cm 2 and left at room temperature for 1 hour to obtain a sample. Further, the persistence after washing was confirmed by an iodine starch reaction. Protein stains were obtained by separately attaching egg yolk and white meat to a slide glass and leaving them at room temperature for 1 hour to prepare a sample. In addition, since the white body was transparent, the protein indicator amide black 10B was added and colored, and the degree of stain removal was confirmed. Further, the persistence of the yolk after washing was confirmed by an Amido-Schwarz reaction. For oil stains, oil after fried beef was used. That is, oily indicator oil Red O is added to a mixture of oil, broth and a trace amount of protein, and after attaching to a slide glass,
The sample left at room temperature for 1 hour was used as a sample. The lipstick is Lippiers <6> made by Rapiers (main component:
(Dibutylhydroxytoluene) was attached to a slide glass and left at room temperature for 1 hour to obtain a sample.

Was confirmed. The washing effect of the egg white was confirmed under all the washing conditions described above. The cleaning effect of the egg yolk and oil was confirmed under all the above-mentioned cleaning conditions. However, when the detergent was not added and when the detergent concentration was 0.05% by weight, the dirt was removed.
After the washing, water was repelled at places where dirt was attached. Therefore, in order to remove all dirt, it is found that it is desirable to remove proteins that coagulate during high-temperature washing in the first stage and raise the temperature of the washing solution in the second stage to remove lipsticks and rice grains that were difficult to remove conventionally. . That is, by first washing using a washing solution at a detergent concentration of about 0 to 0.1% by weight at a temperature of 50 to 55 ° C., the protein can be washed without coagulating, and at the same time, oil stains can be washed. It can be seen that starch such as rice grains can be washed by washing with a washing solution at 70 to 80 ° C. of about 1 to 0.15% by weight, and lipstick can also be washed.

Tableware such as spoons and chopsticks can be efficiently cleaned using a small amount of detergent. That is, the protein adhered to the tableware is first coagulated by washing the tableware with a washing solution containing alkaline detergent, if necessary, in a strong alkaline water heated to a low temperature of about 50 to 55 ° C. It can be cleaned without oil and oil stains. And then, 7
Rice grains, which have been considered difficult to remove by washing with a washing solution obtained by adding about 0.1 to 0.15% by weight of an alkaline detergent to strongly alkaline water heated to a high temperature of about 0 to 80 ° C. Of lipstick, which is a current problem in dishwashers. Cleaning at a high temperature of about 70 to 80 ° C. has a bactericidal effect. If strong alkaline water heated to about 50 to 55 ° C. and strong alkaline water heated to about 70 to 80 ° C. are stored in separate tanks, the temperature can be kept at a predetermined temperature and the cleaning time can be shortened.
