Abstract
Description
[1] 食用固形物と液体とが容器に密封されている容器詰飲料であって、4cm3以上の食用固形物を2つ以上含有し、飲料の総量に対する食用固形物の割合が10~50重量%である、上記飲料。
[2] 飲料の総量が100~400gである、[1]に記載の飲料。
[3] 食用固形物が果肉片である、[1]または[2]に記載の飲料。
[4] 前記液体のエタノール濃度が1v/v%未満である、[1]~[3]のいずれかに記載の飲料。
[5] 容器が樹脂製容器である、[1]~[4]のいずれかに記載の飲料。
[6] 樹脂製容器の厚さが0.3mm以上である、[5]に記載の飲料。
本発明の飲料は、食用固形物と液体(内容液)とが密封容器に収容されてなる容器詰飲料である。容器の材質は、飲料として通常使用されている紙、樹脂(プラスチック)、金属、ガラスなどいずれのものを用いてもよいが、熱伝導率の低い樹脂製容器を用いると、本発明の効果を享受しやすいことから、好ましい態様の一例である。樹脂製容器は、可撓性を有するものであってもよいが、成形された硬質の容器が好ましく、特に、厚さが0.3mm以上の樹脂製容器が好ましく、厚さ0.4mm以上の樹脂製容器がより好ましい。このような容器としては、図1に示すような断面略台形状でフルオープンの開口部を有するプラスチックカップ容器を例示でき、密封する場合はフィルムなどによって上部の開口部を封止すればよい。
糖度20°の糖液で浸漬処理された缶詰の桃を図2に示す略三角柱状にカットし、果肉片を調製した(果肉片1つあたりの重量:約7g、果肉片1つあたりの体積:4.5cm3)。果肉片7つ(約50g)と市販のフルーツ風味の紅茶飲料150gを、透明な樹脂製パウチ容器(厚さ0.1mm)に充填して密封した後、F値が4以上となる条件でレトルト殺菌し、果肉片入り容器詰飲料を調製した(サンプル1-1)。果肉片の硬さは、650g/cm2であった。
・サンプル1-2:果肉片を1つのみとした以外はサンプル1-1と同様にして調製した容器詰飲料
・サンプル1-3:果肉片を含まず紅茶飲料150gだけを充填した以外はサンプル1-1と同様にして調製した容器詰飲料
・サンプル1-4:果肉片を含まず紅茶飲料200gだけを充填した以外はサンプル1-1と同様にして調製した容器詰飲料
果肉片入り紅茶飲料を冷蔵庫で1日間冷却し、液体部分の温度を7.5℃とした後、この果肉片入り紅茶飲料を冷蔵庫から取り出し、容器ごと25℃の恒温室に静置して、容器内の液体部分の温度を測定した。図3に温度履歴を示すが、複数個の果肉片を入れた本発明の飲料は、他の飲料に比べて液体部分の温度上昇が抑制されていた。
果肉片として、糖度21°の糖液で浸漬処理された缶詰のパインアップルを図4に示すような略四角柱状にカットしたものを調製した(果肉片1つあたりの重量:約13.5g、果肉片1つあたりの体積:8.1cm3)。このようなパインアップルの果肉片と紅茶液を下表に示すように透明な樹脂製容器に充填し、実験1と同様の手順により果肉入り紅茶飲料を製造した。果肉片の硬さは、750g/cm2であった。
果肉片として、糖度22°の糖液で浸漬処理された缶詰のリンゴを、下表に示す大きさのダイス状(立方体または直方体)にカットしたものを使用した。
容器詰飲料を構成する液体に微量のエタノールを添加した以外は、実験3のサンプル3-7と同様にして容器詰飲料を調製した。
下記の食用固形物を用いて、実験3のサンプル3-4と同様にして容器詰飲料を調製した。
・サンプル5-1:糖度20°の糖液で浸漬処理されたナタデココ(1.5cm×1.5cm×1.8cm、1つあたりの重量:6.0g、硬さ:990g/cm2)
・サンプル5-2:マンゴーの生果をダイス状にカットした果肉片(1.5cm×1.5cm×1.8cm、1つあたりの重量:5.6g、硬さ:88g/cm2)
実験3と同様に、容器詰飲料を冷蔵庫から取り出した際の液体部分の温度を測定し、15℃に到達するまでの時間を計測した。下表の結果から明らかなように、食用固形物を含有しない飲料(サンプル3-1)と比較して、本発明に基づいて複数個の食用固形物を入れた飲料は液体部の温度上昇が抑制された。
