Description
(1)測定方法
各油脂のヨウ素価は、基準油脂分析試験法(公益社団法人日本油化学会)の「2.3.4.1−2013ヨウ素価(ウィイス−シクロヘキサン法)」で測定した。
(エステル交換油脂1〜4)
エステル交換油脂1、2は次の方法で調製した。表1に示す割合でラウリン系油脂とパーム系油脂とを混合して110℃に加熱し、十分に脱水させた後、化学触媒としてナトリウムメチラートを油脂量の0.08質量%添加し、減圧下、100℃で0.5時間攪拌しながらエステル交換反応を行った。エステル交換反応後、水洗して触媒を除去し、活性白土を用いて脱色し、更に脱臭を行ってエステル交換油脂を得た。
実施例及び比較例の各試料について次の評価を行った。
(クラッカーの作製)
以下の配合でクラッカーを作製した。あらかじめ水に炭酸アンモニウム、重曹を別々に溶かして、その後全材料を合わせ低速1分、中高速8分ミキシングし、40℃のホイロで約2時間おき、生地を得た。その後生地を9層折りし、2mm厚で型抜きし、220℃で焼成し、クラッカーを得た。
〈クラッカーの配合〉
薄力粉 100質量部
グラニュー糖 8質量部
ショートニング※1 20質量部
脱脂粉乳 2質量部
食塩 1質量部
炭酸アンモニウム 3質量部
重曹 1質量部
パパイン 0.025質量部
温水 30質量部
※1 ショートニング:ミヨシ油脂製「ミヨシショートニングZ」
基準油脂分析試験法(公益社団法人日本油化学会)の「2.5.1.2−2013」によりCDM値を求めた。具体的には、120℃に加熱した油脂に空気を吹き込み、酸化により生成した揮発性分解物を水中に捕集し、水の導電率が急激に変化する変曲点までの時間(hr)を調べた。CDM値が高いほど油脂の酸化安定性が高いことを示す。
実施例で得たコーティング用油脂組成物を上記CDM試験で測定したCDM値に基づき、以下の基準で評価した。
評価基準
◎:25hr以上
○:20hr以上、25hr未満
△:18hr以上、20hr未満
×:18hr未満
コーティング用油脂組成物を塗布したクラッカーをビーカーに入れて閉封し、60℃で1ヶ月保管した後の石鹸臭を以下の基準で評価した。
評価基準
◎:石鹸臭は全くしない。
○:ほとんど石鹸臭はしない。
△:若干石鹸臭がある。
×:強い石鹸臭がある。
コーティング用油脂組成物を塗布したクラッカーをビーカーに入れて閉封し、60℃で1ヶ月保管した後の酸敗臭を以下の基準で評価した。
評価基準
◎:酸敗臭は全くしない。
○:ほとんど酸敗臭はしない。
△:若干酸敗臭がある。
×:強い酸敗臭がある。
上記CDM、石鹸臭、酸敗臭の各項目評価に基づき、以下の基準で評価した。
評価基準
○:CDM、石鹸臭、酸敗臭の各項目評価でいずれも◎あるいは〇の場合
△:CDM、石鹸臭、酸敗臭の各項目評価でいずれも×ではないが、
一つ以上△である場合
×:CDM、石鹸臭、酸敗臭の各項目評価で1つ以上×がある場合
以上の評価の結果を表2に示す。
Claims (1)
- ラウリン系油脂とパーム系油脂とのエステル交換油脂を含有し、前記エステル交換油脂は全構成脂肪酸中の炭素数14以下の飽和脂肪酸量が20質量%未満であり、前記エステル交換油脂の含有量が組成物全量に対して60質量%超90質量%以下であって、2位にラウリン酸が結合されたトリグリセリドの含有量が油脂全量に対して5〜12質量%であり、構成脂肪酸として飽和脂肪酸(S)を2個、不飽和脂肪酸(U)を1個含む2飽和トリグリセリドと、構成脂肪酸として飽和脂肪酸(S)を3個含む3飽和トリグリセリドとの合計割合が油脂全量に対して70質量%以上81質量%未満であって、ヨウ素価が30〜40であるコーティング用油脂組成物。
