Description
a)脂肪2〜25質量%、
b)タンパク様物質5〜25質量%、
c)加水分解デンプン10〜40質量%、
d)茶固形物10〜40質量%、
e)水0〜10質量%、
f)乳糖0〜30質量%
を含む、微粒子状のインスタントティー製品を記載している。
・乾燥茶成分0.3〜10%、
・ショ糖、ブドウ糖、果糖及びその組合せから選択される糖類10〜80%、
・油2〜35%、
・糊化デンプン0.5〜20%並びに
・豆類タンパク質、穀類タンパク質及びその組合せから選択される植物タンパク質0.1〜10%
を含む茶ベースの飲料組成物であって、
植物タンパク質を含む植物性物質の粒子を乾燥物の質量に対して10%未満含有し、前記粒子が10μmを超える直径を有し、糊化デンプン及び植物タンパク質を1:1〜20:1の質量比で含有する、茶ベースの飲料組成物に関する。
・乾燥茶成分0.3〜10%、
・ショ糖、ブドウ糖、果糖及びその組合せから選択される糖類10〜80%
・油2〜35%、
・糊化デンプン0.5〜20%並びに
・豆類タンパク質、穀類タンパク質及びその組合せから選択される植物タンパク質0.1〜10%
を含む茶ベースの飲料組成物であって、
植物タンパク質を含む植物性物質の粒子を乾燥物の質量に対して10%未満含有し、前記粒子が10μmを超える直径を有し、糊化デンプン及び植物タンパク質を1:1〜20:1の質量比で含有する、茶ベースの飲料組成物を提供する。
デンプン30〜60質量%、
食物繊維1〜40質量%、
糖類0.5〜12質量%、
タンパク質15〜35質量%、
油0.8〜12質量%
を有する。
茶ベースのレディトゥドリンク飲料を、Table 1(表1)に示す配合表に基づいて、ティーカップに調製した。
・レンズ豆粉(粉砕し、ふるいにかけて200ミクロン未満にしたもの)を冷水に加え(粉4部及び水96部)、手で手早く混ぜて、粉を水中に分散させた
・混合物を水浴中90℃に加熱し、Ultra Turraxを用い、およそ13,500rpmの高剪断で混合しながら、この温度で30分保持して、スラリーを生成した
・乾燥成分(レンズ豆粉を除く)をティーカップに入れた
・沸騰した湯(105ml)をカップに注いだ
・カップの内容物をスプーンでかき混ぜた
・前もって調製しておいたレンズ豆スラリー(45g)を、熱い間にカップに加えた
・カップの内容物をスプーンでかき混ぜた
茶ベースのレディトゥドリンク飲料を、Table 1a(表2)に示す配合表に基づいて、ティーカップに調製した。
デンプン画分及びタンパク質画分は、水中でレンズ豆粉を混合することによって得られた。pHは9.5に増加した。一晩撹拌した後、サンプルを遠心した。上清はタンパク質を含有し、ペレットはデンプンを含有している。pHを中性に調整した後、デンプン画分は先に記載されているように調理し、一方、タンパク質画分はそのまま使用した。ミルクティーを、実施例1におけるように調製した。サンプルB及びサンプルC中のデンプンレベル又はタンパク質レベルは、サンプルA中のものと同一であった。
今回は、レンズ豆粉を、アルファ化されたレンズ豆粉の形態で、乾燥成分の一部として加えたことを除いて、実施例1を繰り返した。アルファ化された粉は、90℃で調理しておいたアルファ化されたレンズ豆スラリーを噴霧乾燥することによって調製したものであった。乾燥成分をティーカップに導入しておいた後、沸騰した湯を加え、カップの内容物をスプーンでよくかき混ぜた。
レンズ豆粉の他に、以下の粉
・トウモロコシ粉
・米粉
・黄エンドウ豆粉
も試験したことを除いて、実施例1を繰り返した。これらの粉は、全く同じ分量を使用した。
実施例1に記載されているものと同じやり方で、飲料を調製した。加えて、レンズ豆粉が、トウモロコシデンプン(及び水)又はトウモロコシデンプン及び植物タンパク質(及び水)の組合せで置き換えられている飲料を調製した。トウモロコシデンプン及び植物タンパク質を、レンズ豆粉による飲料中で提供されるデンプン及びタンパク質の量に相当する分量で加えた。
植物タンパク質(豆類タンパク質及び穀類タンパク質)とカテキン類との間の相互作用を調べた。紅茶粉末(1.34g)を、沸騰した湯500ml中に分散し、そのように調製された茶をろ紙(Schleicher and Schuell社、折り畳みろ紙)上でろ過して、茶の粒子を除去した。
Claims (9)
- 乾燥物の質量に対して算出して、
・乾燥茶成分0.3〜10%、
・ショ糖、ブドウ糖、果糖及びその組合せから選択される糖類10〜80%、
・油2〜35%、
・糊化デンプン0.5〜20%並びに
・レンズ豆(lentil)タンパク質、エンドウ豆(pea)タンパク質、インゲン豆(bean)タンパク質およびその組み合わせから選択される、食用の豆類(pulse)タンパク質である、植物タンパク質0.1〜10%、
を含む、レディトゥドリンク飲料または再構成可能な粉末の形態の、茶ベースの飲料組成物であって、
前記植物タンパク質を含む植物性物質の粒子を乾燥物の質量に対して10%未満含有し、前記粒子が10μmを超える直径を有し、前記糊化デンプン及び前記植物タンパク質を1:1〜20:1の質量比で含有し、
レンズ豆(lentil)粉、エンドウ豆(pea)粉、インゲン豆(bean)粉及びその組合せから選択される食用の豆類(pulse)の粉を、乾燥物の質量に対して0.7〜25%含有する、
茶ベースの飲料組成物。 - 糊化デンプン及び植物タンパク質を4:3〜10:1の質量比で含有する、請求項1に記載の飲料組成物。
- 乾燥茶成分、油、糊化デンプン、植物タンパク質及び糖類が、一緒になって、飲料組成物に含有される乾燥物のうちの少なくとも80質量%を構成する、請求項1又は2に記載の飲料組成物。
- テアニンを、乾燥物1kg当たり少なくとも50mg含有する、請求項1から3のいずれか一項に記載の飲料組成物。
- 油以外の不溶性物を、乾燥物の質量に対して10%未満含有する、請求項1から4のいずれか一項に記載の飲料組成物。
- 乳タンパク質を、乾燥物の質量に対して0.5〜20%含有する、請求項1から5のいずれか一項に記載の飲料組成物。
- レディトゥドリンク飲料であり、35℃及び50s-1で、1〜50mPa.sの粘度を有する、請求項1から6のいずれか一項に記載の飲料組成物。
- 前記飲料が、水を75〜97質量%含有する、請求項7に記載の飲料組成物。
- 再構成可能な粉末であり、粉末1質量部を、湯5〜15質量部と組み合わせて、請求項7または8に記載の飲料組成物を調製することができる、請求項1から6のいずれか一項に記載の飲料組成物。
