Description

食用物質から抽出物および/または搾液を生成する通常の方法は、該食用物質を破砕し、それを溶剤で抽出することを含む。しかしながら、より望ましい化合物をより高濃度で抽出するためには、慣用の方法、例えば高温への加熱、繰り返しの加熱、超臨界抽出、延長された加工時間、腐食性の有機溶剤等が利用されている。

Claims (23)
- 食用抽出生成物の製造方法であって、
粒子に変えられた食用原材料を準備すること、
該食用原材料の粒子を水中で抽出して該食用原材料の抽出物を生成すること、
該食用原材料の抽出物を、10000分子量フィルタを少なくとも用いて、該食用原材料の抽出物中のクロロゲン酸の濃度が高まると同時に、該食用原材料の抽出物中の脂肪の濃度が低下するように濾過すること、そして
得られた濾過保持液を該食用原材料の濾過された抽出物から分離して、食用抽出生成物を形成すること
を含み、前記食用原材料がグリーンコーヒー豆を含む前記製造方法。 - 前記食用原材料の抽出物の濾過は、該食用原材料の抽出物中のクロロゲン酸の濃度の少なくとも倍増を含む、請求項1に記載の方法。
- 前記食用原材料の抽出物の濾過は、少なくとも、該食用原材料の抽出物中の脂肪の濃度の少なくとも半減を含む、請求項1又は請求項2記載の方法。
- 前記少なくとも1つのフィルタは、メンブレンフィルタを含む、請求項1〜請求項3のいずれか1項に記載の方法。
- 前記食用原材料の抽出物の濾過は、2つのフィルタの使用を含む、請求項1〜請求項4のいずれか1項に記載の方法。
- 前記2つのフィルタのそれぞれは、10000分子量フィルタ及び5000分子量フィルタである、請求項5に記載の方法。
- 一番目のフィルタは、10000分子量フィルタであり、二番目のフィルタは5000分子量フィルタである、請求項5に記載の方法。
- 前記食用原材料の抽出物の濾過の前に、該食用原材料の抽出物に酵素を添加することを更に含む、請求項1〜請求項7のいずれか1項に記載の方法。

前記食用原材料の一番目の濾過がされた抽出物を、二番目の5000分子量フィルタを用いて、前記食用原材料の二番目の濾過がされた得られた抽出物において、該食用原材料の濾過された抽出物中のクロロゲン酸の濃度が高まると同時に、該食用原材料の濾過された抽出物中の脂肪の濃度が低下するように濾過すること、
得られた二番目の濾過保持液を前記食用原材料の二番目の濾過がされた抽出物から分離して、食用抽出生成物を形成すること
を含み、前記食用原材料がグリーンコーヒー豆を含む前記製造方法。 - 前記方法は、該食用原材料の抽出物中のクロロゲン酸の濃度の少なくとも倍増を含む、請求項20に記載の方法。
- 前記方法は、少なくとも、該食用原材料の抽出物中の脂肪の濃度の少なくとも半減を含む、請求項20又は請求項21に記載の方法。
