乳酸カルシウム:乳酸カルシウムSS(扶桑化学工業株式会社製)

(2)次に、冷凍ムキエビ(ホワイト100−200)を流水解凍し、ザルを用いて十分に水切りした。
(3)この200gのムキエビと、上記浸漬液とを重量比1:1の割合で浸漬容器内に設け、1晩(18時間)静置して浸漬処理を行った。
(4)次に、ザルを用いて十分に水切りした。
(5)次に、90℃以上に保持した熱湯でムキエビを2分間ボイルした。
(6)次に、ザルを用いて十分に水切りした後、15分間放冷した。
(7)次に、ムキエビを−25℃の急速冷凍機で冷凍した。
(8)次に、冷凍されたムキエビに対し、電子レンジを用いて500Wで2分間の加熱を行い、実施例及び比較例とした。
