(畜肉用途試作工程)
以下の工程(1)〜(7)により、実施例及び比較例を作製した。
(1)まず、表5及び6に記載の組成を有する製剤を水に溶解させ、次に各種調味料を添加し、表7に記載のピックル液(調味液)を準備した。なお、表5〜7の各組成に関する数値の単位はそれぞれ質量%である。

(5)次に、MARUZEN製コンベクションオーブンを用いて170℃5分間スチームオーブン加熱した。
(6)次に放冷した後、冷凍した。
(7)次に電子レンジを用いて、500Wで1分間30秒加熱を行い、実施例及び比較例とした。
