〔試験例1〕[米糠由来不けん化物の添加量]
米糠油、ヨウ素価67のパームオレイン(以下特に明記してない「パームオレイン」はヨウ素価67のものを使用した)と米糠油(5:5)およびパームオレインに表2に示した量の米糠由来不けん化物を添加した油脂組成物を鍋に1kg張り込み、あらかじめ60℃で水分20%程度まで乾燥した米菓生地を1分間、230℃で揚げた。
それぞれの油脂組成物について、揚げ作業を行っていない空加熱時の油のにおい、揚げた直後の米菓の風味、60℃で12日間保存後の米菓の風味、さらに米菓の外観(油のべたつき、生地の色)の評価をおこなった結果を下記のように表記し、表2に示した。

表2の結果より、パームオレインに米糠由来不けん化物を0.01〜5重量%添加することで米菓の風味が付与され、特に0.5重量%(実施例4)以上の添加量で米菓の風味(揚げた直後と60℃で12日間保存後)がよくなるとともに、加熱時の油の劣化臭が抑えられて米糠油特有の甘い香りが発生し、さらには米菓の外観もよくなった。一方、米糠由来不けん化物を添加しなかったパームオレイン(比較例3)では、空加熱時にパーム特有の好ましくないにおいが生じ、米菓の風味(揚げた直後と60℃で12日間保存後)もコクがなく好ましくなく、さらには、米菓の外観も白っぽくて好ましくなかった。また、米糠油、パームオレインと米糠油を5:5で混合した油脂組成物(比較例1、2)については、加熱時の油のにおいと揚げた直後の米菓の風味は良好であったが、60℃で12日間保存後の米菓は劣化風味が強く、さらに米菓の包材への油の付着が見られて外観も好ましくなかった。   From the results in Table 2, the flavor of rice crackers is imparted by adding 0.01-5% by weight of rice bran-derived unsaponifiable matter to palm olein, especially at an addition amount of 0.5% by weight (Example 4) or more.
