Description
各試験液にスダチを浸漬した後に取り出し、室温に放置し、鮮度保持試験を行った。鮮度保持試験は、所定の期間経過後のスダチの色を目視で評価することにより行ない、A:緑色、B:わずかに黄色化、C:部分的に黄色化、D:黄色化、と判定した。同時に果皮のハリについても目視、感触により評価し、A:ハリがあり鮮度が良好、B:ハリが保たれている、C:やや萎びてツヤがない、D:ツヤがなく萎びている、と判定した。その結果を表1に示す。
実施例1で抽出した抽出液を用いて表2に記す各試験液を調製した。
各試験液にブロッコリーを浸漬した後に取り出し、室温に放置し、鮮度保持試験を行った。鮮度保持試験は、所定の期間経過後のブロッコリーの色を目視で評価することにより行ない、A:緑色、B:わずかに黄色化、C:部分的に黄色化、D:黄色化、と判定した。また同時に葉茎の鮮度についても目視、感触により評価し、A:ハリがあり鮮度が良好、B:ハリが保たれている、C:葉がやや萎びてハリがない、D:茎まで萎びている、と判定した。その結果を表2に示す。
実施例1で抽出した抽出液を用いて表3に記す各試験液を調製した。
各試験液にレモンを浸漬した後に取り出し5℃下に長期冷蔵保存し鮮度保持試験を行った。所定の期間経過後のレモンの色を目視で評価することにより行ない、評価は1週間ごとに目視で確認し評価した。A:緑色、B:わずかに黄色化、C:部分的に黄色化、D:黄色化、と判定した。同時に果皮のハリについても目視、感触により評価し、A:ハリがあり鮮度が良好、B:ハリが保たれている、C:やや萎びてツヤがない、D:ツヤがなく萎びている、と判定した。その結果を表3に記す。
Claims (4)
- カワラヨモギ抽出物を含有することを特徴とする青果物のハリ保持、退色抑制剤。
- HLB値が8〜20のポリグリセリン脂肪酸エステル及び/またはショ糖脂肪酸エステルを含有する請求項1に記載された青果物のハリ保持、退色抑制剤。
- 脂肪酸グリセリドを含有することを特徴とする請求項1または請求項2に記載された青果物のハリ保持、退色抑制剤。
- 前記青果物が柑橘類の果実であることを特徴とする請求項1〜3のいずれかに記載の青果物のハリ保持、退色抑制剤。
