Claims (3)
- 酸性可溶大豆たん白をその等電点未満のpHで製膜したたん白素材の皮膜状形成物を、再水和させた、クラッシュゼリー様の食感を有する水和物。
- 請求項1に記載の、たん白素材皮膜状形成物水和物を、含んでなる食品。
- 酸性可溶大豆たん白をその等電点未満のpHで製膜したたん白素材を再水和させることを特徴とする、クラッシュゼリー様の食感を有する食品の製造方法。
