2時間冷蔵の後30℃保存で、賞味可能期間を測定し
た。比較例として、ポリリジン−ゼラチン混合製剤のか
わりに比較例7は、3重量%ゼラチン水溶液、比較例8
はポリリジン50重量%粉末1重量%水溶液、比較例9
は水を添加する以外は実施例3に準拠してケーキを作製
し、その賞味可能期間を測定した。結果を表3に示す。

リームの水分活性上昇が抑制され、ポリリジンの静菌効
果が十分に発揮されるものと考えられる。

して、ポリリジン−ゼラチン混合製剤のかわりに、比較
例10は、ゼラチン5gを調味液に溶解したもの、比較
例11は、ポリリジン−グリシン製剤3gを調味液に溶
解したもの、比較例12はなにも添加しない調味液を用
いる以外は実施例4に準拠してポテトサラダを作製し、
その賞味可能期間を測定した。結果を表4に示す。
