て熱変性が生じ難くなるので90℃以上の高温度での殺
菌処理が可能となる。それ故、予め糖濃度50%以上の
加糖卵黄液を調製し、かかる高濃度の加糖卵黄液を殺菌
処理した後、これに所定量の油脂を加えて油中水型に混
合乳化することによって、保存性が一段と改良された乳
化油脂が得られる、とある。

(油相)の風味が感じられ難くなり、口溶け感が悪くな
