ボコゲル形成を阻害するので、オキアミむき身を処理せ
ずにそのまま練製品に配合しても製品のゲル強度を弱め
てしまう。

得られるオキアミペーストをアルコール変性せしめるこ
とによりカニ肉様食感を有する蛋白食品素材を製造する
方法に関するものである。この方法により得られる製品
は繊維状又は帯状の形成をしているので、練製品原料と
しては用途が限られている。又変性後、水洗の工程を経
るので呈味成分の損失が生ずる欠点がある。従ってゲル
形成を素材する酵素を有するオキアミ生むき身のより有
効な処理方法が望まれる。

することを目的とするものであり、本発明者の研究、実
験によれば、加熱によらず、酸又はアルカリによりその
蛋白を一旦変性させ、その後中和したオキアミむき身等
を利用することによってかかる目的を達成しうることが
見出されたものである。

て酵素を失活させたむき身を配合した場合と比較すると
ほぼ近い直加熱ゲル強度を示したが坐りゲル強度は本発
明の処理した場合の方が高い値を示す。
