Abstract
Description
本出願は、全て2011年9月12日に出願された米国特許出願第13/199,910号の一部継続である、2011年12月29日に出願された係属中の米国特許出願第13/374,441号、2011年12月27日に出願された係属中の米国特許出願第13/374,417号、2011年12月27日に出願された係属中の米国特許出願第13/374,422号、2011年12月27日に出願された係属中の米国特許出願第13/374,421号および2011年12月27日に出願された係属中の米国特許出願第13/374,423号の一部継続である。
本発明は、オリフィス内にベンチュリ効果を引き起こすための装置および方法に関する。
今現在ある食品成形技術は、高い圧力、速度および複雑な材料流路に依存し、それらにより品質を欠いた製品が製造される。高い圧力は肉の細胞に作用し、圧力が高くなるほど肉細胞はより揉まれる、または絞られる。複雑な流路と組み合わされた高い速度は、肉製品を揉み、肉製品に作用し、細胞からミオシン/アクチンを分離し、筋線維を結合させ、収縮させる(タンパク質結合)。
本発明は、ベンチュリ効果を生じさせる装置および方法に関する。装置および方法が、固体、液体および気体とともに使用されることが本発明の目的である。ベンチュリ効果が製品の加速を増大すること、および製品の圧力を低減することが本発明の目的である。ベンチュリ効果が加速を低減すること、および圧力を増大することが本発明の目的である。ベンチュリ効果がオリフィスによって引き起こされることが本発明の目的である。ベンチュリ効果が管の中で引き起こされることが本発明の目的である。オリフィスのベンチュリ効果が製品の線維を引き伸ばし、整列することが本発明の目的である。穴またはオリフィスが垂直または凹側でより大きい直径からより小さい直径まで寸法を変えることが本発明の目的である。前記の側が鋭い縁部を有することが本発明の目的である。原理はベンチュリに類似した設計を有する。それは、オリフィスを通して対応する圧力低下を有する製品加速をもたらすノズル、ベンチュリ、オリフィス、または流れ制限部とよばれる。
図1は、球形部分12と円筒部分14とを有するオリフィス10を示す。
・球形部の全ての地点は固定点から同じ距離である。
・球形部の外径および面部分は円形である。
・球形部は同じ幅および周囲寸法を有する。
・球形部は最少表面積を有する最大容積を有する。
・これら特性により肉は最少の中断で流れることができる。静止領域および不動領域はない。
・何度で円筒部分が球形部と交差しようが、断面は常に完全な円である。
・球形部の内側の圧力は、全ての方向で均一である。
Claims (20)
- ベンチュリ効果を引き起こす円筒部分に通じる球形部分から構成されたオリフィスまたは管を含む装置。
- 前記ベンチュリ効果により、前記オリフィスを通して配置される材料の線維が配向および/または整列される、請求項1に記載の装置。
- 前記ベンチュリ効果により、前記オリフィスを通して引かれる材料が引き伸ばされる、請求項1に記載の装置。
- 前記オリフィスにより、前記オリフィスを通過する材料の最小断面が形成される、請求項1に記載の装置。
- 前記オリフィスが通路を画定し、複数の前記通路のそれぞれが、オリフィス垂直軸の中心から約0〜75度の角度で出口通路部分を有する、請求項1に記載の装置。
- 前記オリフィスが通路を画定し、複数の前記通路のそれぞれが、オリフィス垂直軸の中心から約0〜45度の角度で出口通路部分を有する、請求項1に記載の装置。
- 前記オリフィスが、使用される液体、ガスまたは固体のチョーク流以下でありかつ前記接続された円筒部分の直径以上である直径を有する球形半球または湾曲構造を有する、請求項1に記載の装置。
- 球形領域の直径対円筒領域の前記直径の比率が約1.1〜2.5であるように前記オリフィスが直径を有する、請求項1に記載の装置。
- 前記オリフィスが、ベンチュリ効果を表す断面を形成するために、球形部分の円筒部との交差を利用する、請求項1に記載の装置。
- 多数のオリフィスを含む装置であって、
前記オリフィスが、円筒部分と交差する球形部分を含み、
前記球形部分の直径と前記円筒部分の直径の比率は、製品が前記オリフィスを通過するときに製品のチョーク流効果に一致する比率である、
装置。 - 前記オリフィスが、鋭い縁部を有する垂直または凹側でより大きい断面積からより小さい断面積へ寸法を変える、請求項10に記載の装置。
- 前記オリフィスを通して対応する圧力低下を有する製品加速をもたらすノズル、ベンチュリ、または流れ制限部を含む多数のオリフィスを含む装置。
- 前記装置が固体製品とともに使用される、請求項1に記載の装置。
- 前記装置が液体製品に使用される、請求項1に記載の装置。
- 前記装置が気体製品に使用される、請求項1に記載の装置。
- 前記装置が油圧式L字継手に配置される、請求項1に記載の装置。
- 前記装置が砲口で使用される、請求項1に記載の装置。
- 前記ベンチュリ効果により加速の増大および圧力の低減がもたらされる、請求項1に記載の装置。
- 前記ベンチュリ効果により加速の低減および圧力の増大がもたらされる、請求項1に記載の装置。
- 球形部または球形部分から円筒部へ、あるいは円筒部から球形部または球形部分へ製品を流すステップと、
前記製品にベンチュリ効果を引き起こすステップと
を含む、ベンチュリ効果を引き起こす方法。
