Description
驚くべきことに、下記化学構造:

Zは、多原子イオンまたは単原子イオンである、を有する物質が、食品、飲料、医薬品およびオーラルケア製品の味を改善するために好適に使用できることを発見した。本発明に係る味改善物質は、乳製品、飲料、果物および野菜ならびにそれらに関連する料理や菓子等の、おいしい食品、おいしくない食品、さらには医薬品、およびオーラルケア製品などを含む広範な様々な用途に特に有用である。
yは、1〜20の整数であり;および
Zは、多原子イオンまたは単原子イオンである;ならびに溶媒から構成される溶液が、食品、飲料、医薬品およびオーラルケア製品の味を改善するために様々な材料に添加できることを発見した。
本開示は、様々な食品組成物中で使用される際に本明細書に開示される電解質オキソニウムイオン錯体が関連する食品、飲料、医薬品またはオーラルケア製品の風味を向上させ、関連する材料の風味パネル(flavor panel)を改善しおよび/または上記組成物の防腐性を高めることができるという予想外の発見に基づいている。特定の実施形態では、電解質は0.01重量%〜30重量%の量で存在することができる。

本明細書に開示される物質の新規の組成物は、質量分率が98%のH2SO4、7超の平均モル濃度(M)及び66°ボーメの比重を有する濃硫酸液体50mlを非反応性容器に仕込むことによって調製され、マグネチックスターラーで攪拌して液体に1HPの機械的エネルギーを与えながら25℃に保つ。
実施例Iで製造した物質を個々の試料に分離する。いくつかを標準温度および50%相対湿度で密閉容器に貯蔵し、常温保存可能性を測定する。他のサンプルを分析し、組成を決定する。試験サンプルについてFFTIRスペクトル分析を行い、水素クーロメトリー(hydrogen coulometery)を用いて滴定する。サンプル物質は、200〜150M強度および187〜178強度の範囲のモル濃度を有する。上記物質は、1.15より大きい比重範囲(gravimetric range)を有する;場合によっては、1.9より大きい範囲を有する。組成物は、安定であり、電荷が均衡していない酸プロトンを総モルの8%〜9%含む1.87〜1.78モルの物質を有する。FFTIRスペクトル分析から、物質は、式:水素(1+),トリアクア−μ3−オキソトリスルフェート(triaqua-μ3-oxotri sulfate)(1:1)を有することが示される。
実施例1に概説した方法に従って製造した物質の5ml部分を、標準温度および圧力で5ml部分の脱イオン・蒸留水中で混合する。過剰な水素イオン濃度は、15体積%を超えると測定され、材料のpHを測定したところ1である。
