Abstract
Description
さらに、水に比べてはるかに高い粘度のNALおよびLWLは、少量の水が飲料濃縮物中に存在する場合でも、かかる反応および変換を非常に遅くする可能性があると考えられる。いくつかのNALおよびLWLの物性を下記の表1に示す。一般に、LWLおよびNV−NALは、典型的には、水またはエタノール(V−NAL)よりもはるかに高い粘度、密度、および沸点を有することが分かる。したがって、非揮発性NALを含むもの等のLWLから調製された飲料濃縮物は、同じコーヒーおよび/または茶固形分を同じレベルで含むが、非揮発性NALまたは他のLWLの代わりに水またはエタノールを用いた対応する濃縮物に比べて、はるかに高い粘度、高い密度、および低い揮発性を有する。いくつかの場合において、高いLWL(NALを含む)粘度は、溶解、分散、または懸濁することができるコーヒーおよび/または茶固形分の量を制限することができるが、より高い粘度は、一部の製品用途において利点となり得、かつ、単独または組み合わせて濃縮物を処方するのに用いられるLWLを選択することにより、または、粘度を低くするためにLWLと組み合わせられる水および/またはエタノールの使用により、制御することができる。
本明細書に記載の低含水飲料濃縮物を飲用液体で希釈し、調製されたばかりの、または凍結されたばかりの(すなわち、調製から24時間以内の)濃縮物から調製された飲料と実質的に同じ、または許容可能な風味品質および外観を有する飲料を提供することができる。このような判断は、一般に、訓練されたパネルまたは消費者の嗜好テストにより行うことができる。例えば、濃縮物の風味安定性は、以下の尺度を使用して、訓練されたパネルにより評価することができる。違いなし(0−1)、若干の違い(2−3)、中程度の違い(4−5)、大きな違い(6−10)。一般に、濃縮物の安定性を評価する目的のために、濃縮物は、密閉容器中で約70°F(21.1℃)で少なくとも12週間、他の態様では少なくとも6ヶ月間、または他の態様では約12ヶ月間にわたり保存され、対照品は冷蔵庫(約40°F(4.4℃))内に保存した。次いで、濃縮物を適当な希釈率で希釈し、即時飲用可能な飲料を提供し、パネルにより試飲される。その後、パネルの各メンバーによる個々の評価を平均化する。平均値が6〜10である濃縮物は、風味が分解されており、失敗した製品であると考えられる。平均値が4〜5である濃縮物は許容可能であるが、平均値が0〜4である濃縮物に比べると望ましくない。
含水量の低い濃縮物を、様々な形態で提供することができ、様々な製法によって調製することができる。エマルジョン、溶液(すなわち、濃縮物中に含まれるNALまたは水性液体に原料が溶解している)、または懸濁液の形態の濃縮物を下記の方法により調製することができる。本明細書に記載の濃縮物は、水溶性および水不溶性の両方の原料、ならびに選択されたLWLまたは水に可溶性および不溶性の原料を含むことができる。また、所望であれば、本明細書に記載の低含水量の液体濃縮物を調製する他の方法も使用することができる。以下の方法は、例示的であることを意図するものであり、範囲を限定するものではない。
いくつかの試みでは、コーヒーおよび/または茶固形分は、例えば、コーヒー豆、(緑、黒、紅、または白)茶葉または茎茶、種子、根、花、茎、枝、樹皮、鞘、芽、皮、および針を含む様々な形態のコーヒーまたは茶固体香料源として提供することができる。さらに、本明細書に開示された種々の方法により、そのまままたは粉砕された状態にて、任意の生、乾燥、焙煎または発酵した形態で、固形分を淹れ、または利用することができる。また、桂皮、生姜、クローブの芽、カルダモンポッド、ローズマリーの針葉、オレンジの皮、ハイビスカス、カモミール、またはバラの花、レモングラスの茎、カカオニブ、マテ茶、チコリ、および他の種子、根、花、茎、枝、樹皮、鞘、芽、皮、針、およびそれらの組み合わせ等の、他の非コーヒーおよび非茶固体香料源を用いることもできる。
濃縮物は、ボトルまたは他のマルチサーブ容器から、シングルサーブポッドまたはカプセルから、バッグインボックス容器のような大型包装から、または自動販売機から等の、任意の方法で包装および取り出しすることができる。利用者の利便性を向上させ、かつ、飲料強度をより良好に制御するために、標準的な温水沸かし器または他の飲食業装置に添加するのに適した大きさの、予め計量された袋または封筒を製造することができる。2種以上の包装された濃縮物を任意の適当な方法で一緒に取り出し、単一の飲料または他の食品を調製することができる。

モカ風味のコーヒー濃縮物の保存試験
以下の表6に示すように、様々なコーヒー種と、グリセロール、水、ソルビトール、液体フルクトース、蜂蜜等の溶媒との組み合わせを用いて作られた70%コーヒー濃縮物に対して、他の保存試験を行った。コーヒー固形分は、コーヒー固形分が20%である1つの試料(MXH II)を除いて、全ての試料に対して11%で添加された。濃縮物は、可溶性コーヒー(パライバ(噴霧乾燥)、サントス(凍結乾燥)、またはマクスウェルハウス(噴霧乾燥))を含んでいた。

- 低含水飲料濃縮物であって、
約5〜約40%の全水分と、
約20〜約80%の低含水液体と、
約5〜約60%のコーヒーおよび/または茶固形分とを含み、
水、低含水液体、コーヒーおよび/または茶固形分の量は、約3.0〜約6.0の間のpHを有する低含水飲料濃縮物を提供するのに有効であり、低含水飲料濃縮物のpHは、密閉容器内で70°F(21.1℃)で12ヶ月保存した後に、約0.5pH単位未満で変化することを特徴とする低含水飲料濃縮物。 - 前記濃縮物は、約20〜約70%の低含水液体を含む、請求項1に記載の低含水飲料濃縮物。
