【従来の技術】調理において食材を加工する多くの場合、まな板と包丁が用いられる。食材は通常あるいは調理の過程において微生物が付着しており、まな板や包丁に容易に移行する。また、食材の残滓物が微生物繁殖の温床ともなる。このため、これらの調理器具は特に洗浄することが推奨されている。一般には中性洗剤を用い洗浄するが、特にまな板ではキズの隙間、また木製のまな板にあってはその内部にまで微生物が侵入し繁殖するため、定期的に塩素系の洗剤による漬け置きが行われている。しかし、臭気の移行や残留した洗剤の食材への移行が懸念されてきた。最も信頼性の高い殺菌方法は煮沸であるが、容器などの準備に手間がかかるほか、特に樹脂製のまな板に変形が生ずるなどにより実施されない。

【発明の実施の形態】本発明の実施の形態による調理器具殺菌装置について図1乃至図2を参照して説明する。
【0007】図1は本実施の形態による水蒸気を殺菌に用いた調理器具殺菌装置を示すブロック図である。図2は熱水を殺菌に用いた調理器具殺菌装置を示すブロック図である。
【0008】水蒸気生成部1には上水が供給される。ここで上水はタンクに貯蔵したものでも、シンク付近の水道から自動給水されるものでも良い。自動給水する場合は装置の状態に応じ、給水量が制御される。上水に殺菌性があり人体への影響が懸念されないアルコールなどの薬剤や電解水を加え、殺菌効果の相乗を図ったり、香り付けのため香料などを加えたりしても良い。

【0010】ファン11は水蒸気による殺菌中にさらにオゾンを導入するための送風機である。かびなどの微生物の侵入を防ぐため、前段にフィルター10を、オゾンの発生効率を高め、また内部の温度を下げないようヒーター12を後段に配し、オゾン発生器13によりオゾンを供給する。オゾン発生器は放電によりオゾンを生成するが、生成手段はこれに限らない。弁14は殺菌部3内部の水蒸気が外部へ漏れることを防ぐための逆流防止弁である。
【0011】殺菌部3で噴霧された水蒸気は冷却部5へ導入される。冷却部は水の入った槽の中に水蒸気の流路となる管が蛇行し、効率的に水蒸気の温度を下げる構造となっている。冷却部5の冷却用の水は手動で給水、または水道より自動給水される。冷却水の劣化を防ぐため、排水弁8、排水ホース9より排水し、定期的に交換することが望ましい。また、排水は上水より温度が高いことから水蒸気生成部1への給水に用いれば、省エネルギーである。排水の再利用は手動給水であっても、排水ホース9より水蒸気生成部1へ自動給水する構造であっても良い。冷却された水蒸気は圧力調整兼逆流防止弁6を経由し、排気ノズル7より装置外へ廃棄される。排気ノズル7は排水ホース9とともにシンクへ配せられる。冷却手段は放熱フィンを配した空冷式、ペルチェ素子など電気的な手段であっても良い。

【0015】図3は本実施例の装置設置の様子である。縦置き型の装置31は場所を取らない形状であり、排水ホース9、排気ノズル7がシンクへと設置されている。装置31は図4のように開閉し、調理器具を内部に設置する。図4(a)は面を開いた様子である。特に狭い台所などでは図4(b)のように前方へスライドし、調理器具を設置すると場所を取らない。なお、メンテナンス時には(a)のように面で開くことが衛生上も望ましい。
【0016】図5は殺菌部3の構造を説明する図である。水蒸気生成部1で生成した水蒸気は導入管52を通り、噴霧穴53より支持具51に支持された調理器具4に噴霧される。噴霧穴53はノズル状であっても良いが、A断面図のように一面に開けられた穴が簡便である。導入管52は溝状に型のついた板と噴霧穴53が一面に開いた板を張り合わせた構造が安価で衛生的である。これにより殺菌部3の内部はノズルなど余計な突起が無く、汚れにくく掃除し易い構造となる。殺菌部3に殺菌灯を配する場合、内面を酸化チタンなどの光触媒物質を担持させるなどすると装置の清浄度はさらに高くなる。
【0017】図6は殺菌装置を調理台として使用する例である。横置き型の装置61の天面にはまな板などを設置、調理できるようすべり止め62が配されている。さらに狭く装置の設置が難しい場合、有効である。

【発明の効果】以上説明した通り、本発明によれば、まな板、包丁などの調理器具を最も信頼できる熱により短時間で殺菌することができ、また変形などの弊害を生じさせない調理器具殺菌装置を提供することができる。

DESCRIPTION OF THE PREFERRED EMBODIMENTS A cooking utensil sterilizer according to an embodiment of the present invention will be described with reference to FIGS.
FIG. 1 is a block diagram showing a cooking utensil sterilizer using steam for sterilization according to the present embodiment. FIG. 2 is a block diagram showing a cooking utensil sterilizer using hot water for sterilization.
[0008] Water is supplied to the steam generator 1. Here, the tap water may be stored in a tank or automatically supplied from a tap near the sink. The fan 11 is a blower for introducing ozone during sterilization with steam. Ozone is supplied by the ozone generator 13. The ozone generator generates ozone by discharging, but the generating means is not limited to this. The valve 14 is a check valve for preventing water vapor inside the sterilizing section 3 from leaking to the outside.
The steam sprayed in the sterilizing section 3 is introduced into the cooling section 5. The cooling section has a structure in which a pipe serving as a water vapor passage meanders in a tank containing water, thereby efficiently lowering the temperature of the water vapor. Water for cooling of the cooling unit 5 is supplied manually or automatically supplied from a tap. In order to prevent the deterioration of the cooling water, it is desirable to drain the water from the drain valve 8 and the drain hose 9 and replace it periodically. Further, since the temperature of the wastewater is higher than that of the tap water, energy can be saved if the wastewater is used for supplying water to the steam generator 1. The reuse of wastewater may be manual water supply or a structure in which water is automatically supplied from the drainage hose 9 to the steam generation unit 1. The cooled water vapor passes through the pressure control and check valve 6 and is discharged from the exhaust nozzle 7 to the outside of the apparatus. The exhaust nozzle 7 is provided to the sink together with the drain hose 9. The cooling means may be an electric means such as an air-cooled type having a radiating fin or a Peltier element.

An example in which hot water is sprayed on the cooking utensil 4 will be described with reference to FIG. The heating unit 21 heats tap water with a heater or the like, and sprays and circulates hot water with a pump 22. FIG. 3 shows how the apparatus of this embodiment is installed. The vertical type device 31 has a space-saving shape, and a drain hose 9 and an exhaust nozzle 7 are installed in a sink.
