Abstract
Ένας οικονομικός συνδυασμός γνωστών διεργασιών παραγωγής τελικών προϊόντων που έχουν σαν κύριο συστατικό το γάλα γαϊδούρας σε μορφή σκόνης περιγράφεται στην εφεύρεση. Με τον τρόπο αυτό τρία διακριτάμεταξύ τους προϊόντα: α) απλή σκόνη β) αρωματισμένη σκόνη γ) διατροφικά ενισχυμένη σκόνη με αναβαθμισμένο θερμιδικό περιεχόμενο, που στοχεύουν να εξυπηρετήσουν τις ειδικές διατροφικές ανάγκες από συγκεκριμένες ομάδες πληθυσμού, όπως ενήλικες με ειδικές διατροφικές ανάγκες, ηλικιωμένοι και νεογνά αντίστοιχα. Ένας καινοτόμος και οικονομικός συνδυασμός: 1) μικροδιήθησης με χρήση κεραμικών μεμβρανών για να αποστειρώσει το γάλα 2) αντίστροφης ώσμωσης ή νανοδιήθησης για να συμπυκνώσει το γάλα σε χαμηλή θερμοκρασία 3) κατ΄επιλογήν προσθήκη αρώματος και / ή υψηλής ποιότητας έξτρα παρθένου ελαιολάδου με ενθυλάκωση στις πρωτεΐνες του γάλακτος και 4) σαν τελικό στάδιο, ξήρανση με κατάψυξη (freeze drying) του απλού ή διατροφικά αναβαθμισμένου και / ή αρωματισμένου συμπυκνωμένου γάλακτος γαϊδούρας με σκοπό την παραγωγή μικροβιολογικά σταθερού προϊόντος με μορφή σκόνης γάλακτος.
