Abstract
A food preservative, especially for ready-to-eat salads and spreads of potato, macaroni, meat, fish, egg, cabbage, red and green peppers, onion and celery with French dressing of oil and vinegar, mayonnaise of oil, vinegar and egg yolk or salad dressing of oil, vinegar, egg yolk and cooked starch paste, comprises 0.0013-133 parts of ethylenediaminetetraacetic acid or a soluble salt thereof such as disodium or disodium calcium ethylenediaminetetraacetate to one part of an edible fungistat such as a saturated lower aliphatic or an alphabeta unsaturated carboxylic acid, e.g. propionic, diacetic, sorbic, alpha-hexenoic, benzoic, parahydroxybenzoic, crotonic, isocrotonic, betaethylacrylic or dimethylacrylic acid, or a methyl, ethyl or propyl ester or sodium, potassium, magnesium or calcium salt thereof. The food preserved is preferably of pH 3-6, examples of the acidifying agents being acetic, citric, lactic and phosphoric acids.
