Abstract
L-Glutamic acid or the ammonium, alkali metal or alkaline earth metal salts thereof are obtained by fermenting alpha-ketoglutaric acid or an ammonium, alkali metal or alkaline earth metal salt thereof, in aqueous admixture with an ammonia-affording nitrogen source and a biological catalytic system comprising the substances produced by a micro-organism of the genus Aeromonas and obtained therefrom by extraction, lysis, maceration, or release into the fermentation medium during the life process of the micro-organism, or comprising the microorganism itself. Temperatures are suitably 30 to 50 DEG C. and the pH is suitably between 6 and 9. The fermentation medium optionally contains phosphate and metallic ion enzyme activators. The salts of the L-glutamic acid may be converted to the free acid by acid hydrolysis.
