Abstract
A smoked meat product such as smoked sausages, bacon, ham and shoulders, is inserted into a bag of pliable, substantially air-proof and moisture-proof material, the bag is evacuated and sealed, and the product is then sterilized or pasteurized therein. The bag preferably consists of a laminated material including a layer of air-proof and a layer of moisture-proof materials and for sterilization or pasteurization is bathed in heated air of controlled humidity or irradiated with ionizing radiation. According to an example, smoked sausages were inserted into bags, consisting of a layer of polyethylene and a layer of cellulose, which were then evacuated and heat-sealed; the filled bags were subjected to a current of air at 85 DEG C. having a relative humidity of 60 per cent for one hour for pasteurization of the product and were then cooled by immersion in cold water.
