Abstract
To milk, skim milk, cream, buttermilk, condensed whole or skim milk, evaporated milk, sweetened condensed milk, or chocolate or malted milk, containing, if desired, whey, there is added, in quantity sufficient to produce pH7, a mixture of substances present in the ash of milk, which ash is of composition, in relative proportions by weight, potassium oxide 0.175, sodium oxide 0.070, calcium oxide 0.140, magnesium oxide 0.017, iron oxide 0.001, sulphur trioxide 0.027, phosphoric pentoxide 0.170, chlorine 0.100, the mixture comprising at least sodium oxide, calcium oxide and magnesium oxide, and thereafter is added, in quantity sufficient to bring the lactic acid content to 0.10-0.15 per cent., a medium, preferably a portion of the milk or milk product itself, in which a lactic acid-producing bacillus, e.g., B. helveticus, bulgaricus or acidophilus, has been cultured. According to the Specification as open to inspection under Sect. 91 the milk products include cheese, e.g., Cheddar, Swiss, Roquefort, Limburger, process brick cottage cheeses, and cheese spread. This subject-matter does not appear in the Specification as accepted.
