Abstract
Hollow chocolate Easter eggs are produced by forming a hollow core of wafer biscuit material and coating the core with chocolate. The core may be provided in two halves which are joined together before or after coating with chocolate. The halves may be joined by an edible gum or adhesive, sugar icing, chocolate piping, or by binding with ribbon or by warming coated halves and pressing them together. The core may be formed by pressing wafer biscuit material between dies and baking. The core may be of a chocolate colour and may have a pattern in relief or intaglio. The coating may be effected in an enrober, or by dipping or spraying, or by rotating it in a revolving dragee pan. Toys, jewellery or sweetmeats may be enclosed in the core.
