Abstract
The present invention relates to a yeast cell expressing one or more proteins with fructanase activity as well as a synthetic gene and an expression system for its expression in yeast cells. While naturally occurring yeast cells do not have any catabolic or metabolic capabilities to use fructans as a source, the yeast cell according to the invention has a fructanase activity and can break down or hydrolyse fructans into fructose molecules. The yeast cell of the present invention may be used in bioethanol production.
