Abstract
Packaging for fresh crispy bread and products thereof such as sandwiches comprises an outer wrapping 1 containing a gaseous mixture 4 and an inner wrapping 2. The inner wrapping 2 may have microperforations. The outer wrapping 1 may have a tongue 5 and weak zone 3 which can be torn off to open one end of the package. Deterioration of the contents due to oxygen or humidity is thus minimised. The wrappings 1, 2 may be of transparent plastics such as PVC or polyethylene terephtalate. The gaseous mixture may be 75% nitrogen and 25% carbon dioxide.
Description
Page 1 The present invention relates to a packing method for preserving
the fresh crispy bread as well as the finished products issued from fresh crispy bread.
Firstly, these products are traditionally stored at ambient conditions or in simple aerated bags which expose them to the action of oxygen and of humidity and causes a very quick degradation of their quality.
Secondly, some closed bags sometimes contain a gas to prevent from the development of bacteriums, but when some thermic shock happen even slightly, a condensation always appear inside the said bags, especially in the case of warm sandwiches like the panini, which unpleasantly softens the crust of the fresh crispy bread.
The gaseous mixture used in these bags often contain some azote and some carbonic gas which proportion is purposely limited, because above a certain quantity, this gas adulterates the quality of the food because it gives an unpleasant tingling and acid sensation to the ingredients like meat, sauces, and vegetables of the sandwiches, which makes this method partly inefficient.
The device according to the invention allows to remedy to these two inconveniences.
It effectively consist in a first characteristic, a packing constituted of an external part allowing to isolate the product from the oxygen and of the humidity contained in the ambient external atmosphere, and an internal part allowing to prevent the accumulation of the humidity on the crust of the bread, coming from the ingredients of the contained product, both packings bringing a second characteristic with an isothermic action that allows to concentrate the humidity in a determined place inside the packing.
According to particulars modes of realization: - the external part of the packing is realized in transparent plastic material thick and hermetic enough for example in polyvinyl chloride, polyethylene terephtalate or equivalent material, in a size suitable for the product, it is provided with a weak zone as well as a tongue allowing the easy opening by tearing action. Its form can vary depending on the utilization of the product: cylindric for storage in automatic distributor, or with square section for storage in cartons or shelves.

Page 2 In reference to these drawings, the appliance consist in an external packing 1 containing a gaseous mixture and an internal packing 2 containing the product to preserve.
The product is isolated from the oxygen and from the humidity contained in the outer ambient atmosphere, which avoids their action on the product contained in the internal packing 2.
The humidity freed from the ingredients of the bread or the finished product manufactured with fresh bread, evaporates out of the internal packing 2 and fixes itself up to saturation outside the said packing, in the external packing 1. A gaseous mixture suitable for food is injected between the two packings. In case of thermic shock the condensation 4 that appears like moisture when the product warms up, fixes itself on the internal part of the external packing where it is purposely held and does not come in contact with the product any longer, because in case of streaming it slips on the external surface of the internal packing which avoids the softening of the crust of the bread. For unlimitative example, the external packing will have some square sections and the internal packing will be cylindrical. Their unlimitative dimensions will for example be for a product of about 30 centimetres lenght and of about 6 centimetres diameter, of about: - for the external packing: about 30 cm in the lenght, 8 cm in height, 8 cm in the width and a thickness of 30 microns.
- for the internal packing about 30 cm in the lenght' about 6 cm diameter and a thickness of 20 microns. For unlimitative example, the gaseous mixture will be made of 75 % of azote and 25 % of carbonic gas.
The tongue 5 disposed on the weak zone of the external packing 3 allows to open this packing.
The packing according to the invention is particularly suitable for packing the fresh crispy bread and the cold or warm sandwiches issued from fresh crispy bread.
Claims (10)
1. Method for packing the fresh crispy bread and the finished products issued from fresh crispy bread wherein it comprises an external packing 1 containing a gaseous mixture, and an internal packing 2 containing the product to preserve.
2. Packing according to claim 1 forming the external part 1 of the packing wherein it forms a barrier against the humidity and the gas and contains a gaseous mixture.
3. Packing according to claim 1 forming the internal part 2 ofthe packing wherein its walls comprise some microperforations, and allows the evaporation of the humidity out of the internal packing and prevent from the condensation to enter in contact with the product contained in the internal packing.
4. Packing according to claim 1 wherein the external packing 1 contains a gaseous mixture preventing from the bacterium development, the quantity and the composition of the said gaseous mixture depending from the contained product.
5. Packing according to claim 1, 2 and 3 wherein it is realized in transparent plastic material.
6. Packing according to one or all of the above claims wherein it is realized in a size suitable for the contained product.
7. Perishable product packed to preserve its organoleptic and bacteriological qualities wherein it is submitted to the contact with a food gas across the microperforated wall of the internal packing 2.
8. Perishable product according to claim 7 wherein all or part of its ingredients are likely to emit some steam when they are at liquid, pasty or solid state.
9. Perishable product packed according to claim 7 wherein it is some fresh crispy bread or some finished products issued from fresh crispy bread like cold or warm sandwiches ready to consume, and containing one or several meats and/or one or several sauces and/or one or several vegetables and/or one or more dairy products.
10. Method according to claims 1, 2, 3 and 4 wherein the volume separating the external packing 1 and the internal packing 2 constitutes a chooser space for holding the humidity freed from the product contained in the internal packing 2.
1 1. Method according to claims 1, 2, 3 and 4 wherein the whole wave of gas, humidity present between the internal packing 2 and the external packing 1, and the walls of the internal and external packings constitute a barrier with isothermic effect.
