Abstract
A process for the production of expanded cooked farinaceous snack- type products of regular shape comprises the treatment of a gelatinised intermediate product, of moisture content 10 to 15% by weight and in substantially laminar form, to remove a major part of the moisture by heating by immersion in a mass of oil-free and fat-free hot dry particulate material, e.g. salt or CaCo3, permitting expansion of the product substantially only in its own plane, and separating excess particulate material from the expanded cooked product. In apparatus for carrying out the process, the dry particulate material may form the working substance 38 of a fluidised bed 31 which may be fluidised using hot air. Products to be expanded are passed through the bed on open mesh conveyors 34, 35, 36 and expansion is restrained by an open mesh belt 37. <IMAGE>
