Abstract
1361963 Isomerizing glucose to fructose: trapped enzymes SNAM PROGETTI SpA 25 Jan 1973 [28 Jan 1972] 3942/73 Heading C2S [Also in Division C3] Fructose or a syrup containing glucose and fructose is made by isomerizing glucose with a glucose isomerase distributed in a finely divided form throughout a polymer filament, in which it is completely retained during the glucose isomerization. The preferred filament is of cellulose triacetate in which there may also be distributed, in addition to the glucose isomerase, an amyloglucosidase, whereby a poly-α-glucosidase (e.g. starch) may be converted to fructose via glucose in a single step.
