Abstract
1,221,183. Dried vegetable soup mixes. UNILEVER Ltd. 15 Oct., 1968 [17 Oct., 1967], No. 47235/67. Heading A2D. A rapidly reconstitutable dried soup mix comprises citrate in the form of an alkali metal salt of citric acid and pieces of dried vegetables, the proportion of citrate present being at least one part by weight calculated as trisodium citrate dihydrate for every 20 parts by weight of dried vegetable pieces. The vegetables in the mix may be selected from carrots, turnips, swedes, parsnips, green beans, onions, cabbage, leek, tomato, celery, celleriac, peppers and peas. The method of reconstitution is particularly applicable to dry soup mixes containing vegetables in the form of pieces in which the cell structure of the vegetable is substantially intact and which have been air dried.
