Bakery apparatus comprises a tunnel oven and a further tunnel which may be heated and humidified to provide a dough-proving atmosphere or subjected to the passage of cooled or refrigerated air so that crusty goods may be produced when the further tunnel is heated and a selectively reversible conveyor is set to pass goods through the further tunnel before the oven, and other goods, e.g. confectionery, may be produced when the further tunnel is cooled and the conveyor reversed.
