1,186,304. Apparatus for cooking foodstuffs under pressure. N. W. THOMPSON. 29 July, 1968 [5 Sept., 1967; 1 July, 1968], No. 36084/68. Heading B1X. A pressure-type deep fry system comprises a high pressure cooking vessel, a heater for heating the cooking medium in the vessel, a pressure-regulator responsive to pressure in the vessel to open a pressure vent in the upper part of the vessel when the pressure in the vessel reaches a predetermined high value and close the pressure vent when the pressure reaches a predetermined low, a timer operable with the heating and set for a predetermined time and responsive to the pressure in the vessel in order to stop heating when the pressure reaches its high value and to begin heating when the pressure reaches its low value. The vessel 12 containing hot fat 13 is fitted with mesh trays 14 supported by rod 15 for holding the food, a cover 16 fitted with a gasket 17 and held in place by clamps 18 and lugs 19, a pressure gauge 80 indicating the pressure in the vessel and a thermocouple 90 connected to the regulating valve 77 of gas burners 75 and so controlling the temperature of the fat in the vessel 12. A pair of juxtaposed storage containers 21 and 23, for storing clean fat preparatory to use in the vessel and contaminated fat from a deep fry cycle, respectively, are connected to vessel 12 by means, including a pump 29 and steam vent line 66 extending from the vessel 12, and having relief valve 91. The container 21 has heater 27 for heating the fat prior to use in the vessel 12 and the container 23 has strainer 53 in order that contaminating particles in the fat in container 23 are left behind when the fat is transferred from 23. to 21 via pipes 55, 33 and 28. In a similar apparatus using water and the cooking medium the valves connecting the containers 21 and 23 to the vessel 12 are closed and water is introduced by a line into the upper portion of the vessel. A drain line is provided below the vessel to receive the cooking fluid after the cooking operation and the steam produced.
