Abstract
1,165,750. Flavouring compositions for food; tobacco-smoke filters. H. B. TAYLOR CO. 8 Nov., 1966, No. 49906/66. Headings A2B and A2C. A stabilized flavour or odour composition for incorporating into foods and tobacco products comprises a carbonyl containing compound which produces the flavour or odour, an aliphatic polyhydroxy alcohol having the structure where n = o, 1 or 2 and a stabilizing amount of a proton acceptor. The carbonyl containing compounds may be vanillin, ethyl vanillin benzaldehyde, cinnamaldehyde, anisaldehyde, veratraldehyde, heliotropin, 2, 6 dimethyl-5-heptenal, alpha-amyl cinnamaldehyde, 3 benzyl-4-heptone, citronellal, cuminaldheyde, 2, 4-dimethyl acetophenone, 2, 6 dimethyl octanal, p-ethoxy benzaldehyde, alphahexyl cinnamaldehyde, hydroxy citronellal, methoxybenzaldehyde, 3-methyl-2-phenyl butyraldehyde, 3-phenyl proprionaldehyde, salicylaldehyde, o-, m-, ptoluodaldehyde, ethylmethylphenyl glycidate and methyl hexyl ketone. The alcohol may be propylene glycol, ethylene glycol, glycerol, sorbitol, 1, 2 propane diol, 1, 3 butanediol, 1, 4 butanediol and 2, 5 hexanediol. The proton acceptor may be sodium and potassium hydroxides, carbonates and bicarbonates, sodium monohydrogen phosphate, sodium acetate, buffer compositions containing proton-accepting salts (e.g. acetic acid-sodium acetate and vegetable protein hydrolyzate-sodium bicarbonate) and amine containing compositions (e.g. alkaline salts of EDTA, ethanolamine and triethylamine) and glycine. .
