[Also in Division B1] A deep fat pressure fryer comprises a container 6 to receive fat and food and having a drain opening, means for heating the container to develop steam pressure from the moisture contained in the food, filtering apparatus 29 for maintaining the fat free from contaminating material so as to be usable in cooking successive batches of food, and a pump 32 through which the fat is returned to the container 6 by way of the drain opening after it has been filtered. At the end of a single cooking operation contaminated fat is discharged on opening a valve 9 into a receptacle 10 and is drawn by the pump 32 through the filter 29 and returned in uncontaminated condition via a valve 35 to the container 6 for further cooking. Steam pressure in the sealed container 6 is controlled during cooking by a pre-set valve 24 communicating by a pipe 25 with the container 6 and also with a condenser unit 62, the steam pressure being released after cooking through a valve 22 and a pipe 23 communicating with the condenser unit 62 and steam condensed on the lid 11 on opening the latter also passing via a gutter at the hinged end of the lid into the valve 22. The filter 29 comprises two interfitting trays 37, 38 having perforations 54 and peripheral flanges 39, and includes a hub 41 extending through central apertures in the trays 37, 38 and having radial passages 43 communicating with the space between the trays 37, 38. The trays 37, 38 are enclosed in a replaceable envelope 48 of filter paper having a central opening to receive the hub 41 and clamped to the upper tray 38 by a plate-like nut 46 communicating by a pipe 30 with the pump 32 by means of which the fat is drawn through the filter 29.
