Abstract
The parent patent describes an enclosure for treating mushrooms; after washing they are brought into contact with a mixt. of brine, mushroom juice, and colloidal matter such as white of egg, milk albumen or polysaccharides from carragheen moss in vacuo. In the addition, the enclosure comprises a stainless steel drum mounted to rotate on the shaft. The internal vol. of the drum is divided into three equal compartments so that each is completely watertight. Each compartment has a central opening reinforced by a ring, presenting a perfectly flat surface. The drum is driven by the toothed wheel and the endless screw. It is controlled by a programmer to make 1/3 of a turn, rest for 3-6 mins. and then turn another 1/3. The enclosure assures a redn. in the losses of taste, vol. and wt. during the blanching process.
