Abstract

Cet appareil, destiné à la maturation des vins de Jerez, dits << Sherry >> comprend plusieurs cuves 3, 4 ayant chacune des dimensions appropriées pour leur permettre respectivement de contenir le vin de chaque échelon criadera et de l'échelon solera, des dispositifs pour transférer, à intervalles de temps, du vin directement de cuve constituant le premier échelon criadera à la cuve constituant l'échelon solera, et des dispositifs pour transférer directement du vin, à des intervalles de temps similaires de chacune des autres cuves constituant un échelon criadera à la cuve de l'échelon criadera suivant.
