Abstract
La présenté invention concerne un nouveau procédé de fabrication de caramels durs contenant du xylitol. Le procédé de l'invention est caractérisé par le fait qu'on ajoute, à une masse fondue de xylitol, du xylitol en poudre, à une température sensiblement au plus égale au point de fusion du xylitol. Application à l'industrie alimentaire.
