Abstract

The barbecue is an open ended metal cylinder (1) with feet at one end. Inside are brackets for a shallow pan containing the charcoal fuel and, over this, is the grille (4). A semi-circular windshield (7) at the back has locations for the spit (6), turned by hand or motor (8). When required for smoke curing, the shallow pan is placed at foot level to seal the lower opening and a deeper pan replaces it and is filled with hot charcoal and wood chips to generate the smoke. The windbreak is removed and a hood (5) placed over, sealing in the smoke.
