Abstract

Maceration and fermentation of crushed fruits is effected in a liq. which contains (a portion of) their own juice. Maceration produces spirituous liquors as in the mfr. of fruit creams. The process is equally applicable to the fermentation of grape must, with its marc, for obtaining red or rose wine. The tank in which the process is operated consists of a cylindrical, vertical vessel, restling on supports. A perforated metal cylinder separates the tank into an internal space and an annular outer space. Pressed grapes are introduced through the changing door together with some of their juice. The marc remains in the inner space and is completely immersed in the must contained in the outer space so that any risk of the marc becoming acetified by the air is avoided. The fermentation temp, of the marc is kept higher than that in the must to dissolve the colour and the tannin; the lower temp. in the must preserves the aroma. The temp. is regulated at 27-30 degrees C by cooling the wall of the tank by the jacket, by a steam of water from the perforated pipe or by recycling the juice in the marc by the pipe and the circulating pump. These operations can be conducted separately or simultaneously according to the temps. measured by thermometers. When fermentation is completed, the liq. is evacuated; the marc, after draining, is withdrawn. The crushed fruits are immersed in a more satisfactory manner than in previous conventional tanks and the operations are carried out at appropriate tamps. for the fruits and for the juice; these are emptied separately at the end of teh run.
