Abstract

Procedimiento para preparar una solución de acuosa de papaína para impedir los fenómenos de enturbiamiento de la cerveza ocasionados por el enfriamiento y almacenaje, caracterizado porque comprende disolver en agua, con agitación, 1,5 o 3,0 % en peso, respecto al producto final, de metabisulfito sódico y ajustar el pH de la solución formada a 4,85 poner tratamiento con NaOH, combinar con esta solución 1 a 35% en peso, respecto al producto final, de papaína y clarificando a continuación la solución resultante, en la cual, finalmente, se incorpora 20 a 60 % en peso, respecto al producto final, de sacarosa.
