Abstract

In a cheese pressing mould consisting of a bottom part (30) and a composite cover part (31) including an outer cover (32) and a spring-biased thrust plate (33) displaceable relative thereto, the two mould parts (30, 31) are clamped together by releasable locking devices. In one embodiment the locking devices comprise notched bars (34) supported in the outer cover (32) substantially in parallel to the height direction of the mould and having several steps for locking engagement with the bottom part (30). This permits both to control the pressing force in dependence on the quantity of curd in the mould and to change the force one or more times during the pressing period, if needed.
