Abstract
Dispositivo y procedimiento destinado a la conservación de frutas y verduras que posibilita el mantenimiento de éstas mediante una atmosfera controlada de baja concentración de oxígeno y/o alta concentración de CO{sub,2} mediante la presurización de un contenedor o cámara mediante generador de aire presurizado, manteniendo esta atmósfera sin el empleo de generadores de nitrógeno. Los flujos de aire inyectados en el contenedor son conocidos y ajustados automáticamente y en modo periódico por un sistema de medidores y controles de O{sub,2} y CO{sub,2}. Dispone de medios para la eliminación del potencial exceso de CO{sub,2}, así como para el mantenimiento de una presión continua positiva en el contenedor. Los flujos de aire son calculados en base al consumo de oxigeno de la fruta y los niveles mínimos permitidos por su fisiología para no causar daño por anaerobiosis.Device and procedure for the preservation of fruits and vegetables that allows their maintenance through a controlled atmosphere of low oxygen concentration and / or high concentration of CO {sub, 2} by pressurizing a container or chamber by means of an air generator pressurized, maintaining this atmosphere without the use of nitrogen generators.
