Abstract
Procedimiento de preparación de platos elaborados en un recipiente tipo paella, de los que se cocinan tradicionalmente con fuego (2) en sartenes denominadas "paella" (1), donde una vez elaboradas, se procede a su racionado en bandejas (4) de material PP/ad/EVOH/ad/PP de cinco capas, (donde el "ad" es adhesivo, EVOH es un Copolímero de alcohol polivinílico y etileno, y PP es polipropileno) en una sala de ambiente controlado (3), para posteriormente pasar a una cámara de abatimiento de temperatura (5) o enfriamiento, y después a un termosellado con una película envoltorio (6) del mismo material que la bandeja y en condiciones de vacío parcial, sometiéndose estas bandejas a un tratamiento térmico en un autoclave (7), y que se mantiene posteriormente en refrigeradores (8), quedando apto el producto para su consumo hasta en un periodo de tiempo de 30 días.Procedure for preparing dishes made in a paella-type container, of which they are traditionally cooked with fire (2) in pans called "paella" (1), where once prepared, they are rationed into trays (4) of material PP / ad / EVOH / ad / PP five layers, (where the "ad" is adhesive, EVOH is a copolymer of polyvinyl alcohol and ethylene, and PP is polypropylene) in a controlled room (3), to later pass to a blast chamber of temperature (5) or cooling, and then to a heat seal with a wrapping film (6) of the same material as the tray and in conditions of partial vacuum, these trays being subjected to a heat treatment in an autoclave (7 ), and which is subsequently kept in refrigerators (8), the product being suitable for consumption up to a period of 30 days.
