PARA PROTEGER UNA MATERIA GRASA CONTRA LA OXIDACION, SE LA PONE EN PRESENCIA DE UNA MATERIA VEGETAL QUE CONTIENEN ANTIOXIDANTES FENOLICOS, MEZCLANDO LA MATERIA VEGETAL Y LA MATERIA GRASA A TEMPERATURA ELEVADA, Y A CONTINUACION SE PRENSA Y CLARIFICA LA MEZCLA PARA OBTENER UNA GRASA LIQUIDO ESTABILIZADA QUE CONTIENEN LOS ANTIOXIDANTES. EN EL CASO DE QUE SE DESEE PROTEGER UN ALIMENTO QUE CONTIENEN UNA MATERIA GRASA SE INCORPORA A LA FASE GRASA DEL ALIMENTO LA GRASA ESTABILIZADA.
