- Procédé pour faire fonctionner un appareil de cuisson, en particulier un appareil de cuisson domestique, incluant au moins une chambre de traitement d'aliments (2), au moins un capteur de température pour détecter la température à l'intérieur de la chambre de traitement d'aliments (2), au moins un élément chauffant (3, 5, 6) pour fournir de l'énergie thermique dans la chambre de traitement d'aliments (2) et au moins une unité de commande (8) pour commander le fonctionnement de l'appareil de cuisson, le procédé incluant les étapes suivantes :a) la réception d'une entrée utilisateur incluant le réglage d'une valeur de température de consigne (TSet) qui doit être atteinte à l'intérieur de la chambre de traitement d'aliments (2) ;b) la fourniture initiale d'énergie thermique dans la chambre de traitement d'aliments (2) pour augmenter la température à l'intérieur de la chambre de traitement d'aliments (2) en commandant l'au moins un élément chauffant (3, 5, 6) pour qu'il fonctionne au moins à un premier niveau de sortie d'énergie prédéterminé (P1) ;c) le fait de déterminer si la température à l'intérieur de la chambre de traitement d'aliments (2) atteint un seuil de température supérieur (UTT) qui est défini au-dessus de la valeur de température de consigne (TSet) ;d) en réponse à l'atteinte du seuil de température supérieur (UTT), la sélection d'un deuxième niveau de sortie d'énergie prédéterminé (P2) sur la base d'un paramètre variable dépendant d'une charge thermique présente dans la chambre de traitement d'aliments (2) ;e) la réduction de la fourniture d'énergie thermique dans la chambre de traitement d'aliments (2) de telle sorte que la température à l'intérieur de la chambre de traitement d'aliments (2) diminue en commandant l'élément chauffant (3, 5, 6) pour qu'il fonctionne au deuxième niveau de sortie d'énergie prédéterminé (P2),dans lequel la sélection d'un deuxième niveau de sortie d'énergie prédéterminé (P2) sur la base d'un paramètre variable inclut la détermination d'un intervalle de temps (Δt) d'un point de départ dans le temps où la fourniture d'énergie thermique est commencée ou modifiée à un point dans le temps où la température à l'intérieur de la chambre de traitement d'aliments (2) atteint une température au-dessus de la valeur de température de consigne (TSet), en particulier atteint le seuil de température supérieur (UTT), dans lequel le deuxième niveau de sortie d'énergie prédéterminé (P2) est sélectionné en fonction de la longueur de l'intervalle de temps (Δt),dans lequel plus le deuxième niveau de sortie d'énergie thermique prédéterminé (P2) est sélectionné haut, plus la longueur de l'intervalle de temps (Δt) déterminé est longue,caractérisé en ce queau moins un ensemble de données est accessible pour ou est accédé par l'unité de commande (8), en particulier dans lequel l'au moins un ensemble de données est stocké dans un stockage de l'unité de commande (8) ou dans un stockage qui est accessible pour l'unité de commande (8),dans lequel l'ensemble de données inclut :- un premier type de données associé à une variété d'intervalles de temps qui peuvent être déterminés par l'unité de commande (8) ;- un second type de données associé à une variété de niveaux de sortie d'énergie permis pour le deuxième niveau de sortie d'énergie prédéterminé (P2) et qui peuvent être définis pour l'au moins un élément chauffant (3, 5, 6) ;dans lequel l'unité de commande (8) détermine l'intervalle de temps (Δt) et, après la détermination de l'intervalle de temps (Δt), sélectionne parmi le second type de données le deuxième niveau de sortie d'énergie prédéterminé (P2) qui est associé à l'intervalle de temps (Δt) déterminé selon l'ensemble de données.
- Procédé selon la revendication 1, pour faire fonctionner un appareil de cuisson, en particulier un appareil de cuisson domestique, incluant au moins une chambre de traitement d'aliments (2), au moins un capteur de température pour détecter la température à l'intérieur de la chambre de traitement d'aliments (2), au moins un élément chauffant (3, 5, 6) pour fournir de l'énergie thermique dans la chambre de traitement d'aliments (2) et au moins une unité de commande (8) pour commander le fonctionnement de l'appareil de cuisson, le procédé incluant les étapes suivantes :a) la réception d'une entrée utilisateur incluant le réglage d'une valeur de température de consigne (TSet) qui doit être atteinte à l'intérieur de la chambre de traitement d'aliments (2) ;b) la fourniture initiale d'énergie thermique dans la chambre de traitement d'aliments (2) pour augmenter la température à l'intérieur de la chambre de traitement d'aliments (2) en commandant l'au moins un élément chauffant (3, 5, 6) pour qu'il fonctionne au moins à un premier niveau de sortie d'énergie prédéterminé (P1) ;c) le fait de déterminer si la température à l'intérieur de la chambre de traitement d'aliments (2) atteint un seuil de température supérieur (UTT) qui est défini au-dessus de la valeur de température de consigne (TSet) ;d) en réponse à l'atteinte du seuil de température supérieur (UTT), la sélection d'un deuxième niveau de sortie d'énergie prédéterminé (P2) sur la base d'un paramètre variable dépendant d'une charge thermique présente dans la chambre de traitement d'aliments (2) ;e) la réduction de la fourniture d'énergie thermique dans la chambre de traitement d'aliments (2) de telle sorte que la température à l'intérieur de la chambre de traitement d'aliments (2) diminue en commandant l'élément chauffant (3, 5, 6) pour qu'il fonctionne au deuxième niveau de sortie d'énergie prédéterminé (P2),caractérisé en ce que
l'appareil de cuisson domestique inclut en outre au moins une porte pour ouvrir et fermer de manière sélective la chambre de traitement d'aliments (2), comprenant, en réponse à l'ouverture et à la fermeture de la porte, le fait de déterminer si la température à l'intérieur de la chambre de traitement d'aliments (2) est supérieure ou inférieure au seuil de température inférieur (LTT), dans lequel la fourniture d'énergie thermique dans la chambre de traitement d'aliments (2) est augmentée lorsqu'il est déterminé que la température est inférieure au seuil de température inférieur (LTT) et dans lequel la fourniture d'énergie thermique dans la chambre de traitement d'aliments (2) est maintenue lorsqu'il est déterminé que la température est supérieure au seuil de température inférieur (LTT). - Procédé selon la revendication 1 ou 2, caractérisé par :f) le fait de déterminer si la température à l'intérieur de la chambre de traitement d'aliments (2) atteint un seuil de température inférieur (LTT) qui est défini en dessous de la valeur de température de consigne (TSet) ;g) en réponse à l'atteinte du seuil de température inférieur (LTT), l'augmentation de la fourniture d'énergie thermique dans la chambre de traitement d'aliments (2) de telle sorte que la température à l'intérieur de la chambre de traitement d'aliments (2) augmente en commandant l'élément chauffant (3, 5, 6) pour qu'il fonctionne à un niveau de sortie d'énergie prédéterminé supérieur au deuxième niveau de sortie d'énergie prédéterminé (P2), en particulier au premier niveau de sortie d'énergie prédéterminé (P1).
- Procédé selon l'une quelconque des revendications précédentes, caractérisé en ce que la charge thermique présente dans la chambre de traitement d'aliments (2) est le volume vide de l'intérieur de la chambre de traitement d'aliments (2) ou est un ou plusieurs morceaux de produit alimentaire et/ou d'ustensiles de cuisine qui sont insérés dans la chambre de traitement d'aliments (2).
- Procédé selon l'une quelconque des revendications précédentes, caractérisé en ce que la fourniture initiale d'énergie thermique à un premier niveau de sortie d'énergie prédéterminé (P1) inclut le fait de déterminer si la température dans la chambre de traitement d'aliments (2) dépasse la valeur de température de consigne (TSet), dans lequel, en réponse au dépassement de la valeur de température de consigne (TSet), l'au moins un élément chauffant (3, 5, 6) est commandé pour fonctionner à un troisième niveau de sortie d'énergie prédéterminé (P3) qui est inférieur au premier niveau de sortie d'énergie prédéterminé (P1), en particulier dans lequel le premier niveau de sortie d'énergie prédéterminé (P1) correspond à une sortie d'énergie de 100 % de la sortie d'énergie maximale possible pour l'au moins un élément chauffant (3, 5, 6) spécifique et dans lequel le troisième niveau de sortie d'énergie prédéterminé (P3) se situe dans une plage comprise entre 30 % et 70 %, de préférence à 50 %, de la sortie d'énergie maximale possible par l'au moins un élément chauffant (3, 5, 6) spécifique.
- Procédé selon l'une quelconque des revendications précédentes, caractérisé en ce que l'appareil de cuisson inclut en outre un ventilateur (4) qui est fourni à l'intérieur de la chambre de traitement d'aliments (2) pour générer un écoulement d'air chaud à l'intérieur de la chambre de traitement d'aliments (2), dans lequel le ventilateur (4) est actionné en continu pendant la phase de fourniture initiale d'énergie thermique dans la chambre de traitement d'aliments (2) avec le premier niveau de sortie d'énergie prédéterminé (P1) et/ou pendant la phase de fourniture réduite d'énergie thermique dans la chambre de traitement d'aliments (2) avec le deuxième niveau de sortie d'énergie prédéterminé (P2) et/ou pendant la phase de fourniture augmentée d'énergie thermique dans la chambre de traitement d'aliments (2) au niveau de sortie d'énergie prédéterminé supérieur au deuxième niveau de sortie d'énergie prédéterminé.
- Procédé selon l'une quelconque des revendications précédentes, caractérisé en ce qu'un cycle de cuisson est défini en ce qu'il inclut les étapes a) à e), en particulier en ce qu'il inclut en outre les étapes f) et g), dans lequel le cycle de cuisson est en outre défini en ce qu'il a une longueur prédéterminée, dans lequel le cycle de cuisson est terminé automatiquement à l'expiration de la longueur prédéterminée et de préférence dans lequel la température à l'intérieur de la chambre de traitement d'aliments (2) dépasse la valeur de température de consigne (TSet) au plus trois fois, plus préférablement au plus deux fois, avant l'expiration de la longueur prédéterminée.
- Procédé selon l'une quelconque des revendications précédentes, caractérisé en ce qu'un cycle de cuisson est défini en ce qu'il inclut les étapes a) à e), en particulier en ce qu'il inclut en outre les étapes f) et g), dans lequel le cycle de cuisson est en outre défini en ce qu'il a une longueur, en particulier prédéterminée, dans lequel une température moyenne à l'intérieur de la chambre de traitement d'aliments (2) calculée sur la longueur du cycle de cuisson a une valeur dans une plage de 5 °C en dessous à 5 °C au-dessus de la valeur de température de consigne (TSet).
- Procédé selon l'une quelconque des revendications précédentes, caractérisé en ce que la température seuil supérieure (UTT) se situe dans une plage comprise entre 10 °C et 35 °C, en particulier entre 15 °C et 25 °C, de préférence entre 15 °C et 20 °C au-dessus de la valeur de température de consigne (TSet) et/ou dans lequel la température seuil inférieure (LTT) se situe dans une plage comprise entre 10 °C et 35 °C, en particulier entre 15 °C et 25 °C, de préférence entre 15 °C et 20 °C en dessous de la valeur de température de consigne (TSet).
- Procédé selon l'une quelconque des revendications précédentes, caractérisé en ce que l'unité de commande (8) reçoit des informations en provenance du capteur de température et détermine si la température à l'intérieur de la chambre de traitement d'aliments (2) atteint le seuil de température supérieur (UTT) ou le seuil de température inférieur (LTT), en particulier dans lequel l'unité de commande (8) calcule des valeurs de température de référence (Tref) qui sont différentes d'une valeur de température actuelle (Tcur) sur la base des informations reçues de la température, sur la base de la valeur de température de consigne (TSet) et sur la base du premier niveau de sortie d'énergie prédéterminé (P1) et du deuxième niveau de sortie d'énergie prédéterminé (P2) et/ou du troisième niveau de sortie d'énergie prédéterminé (P3), de préférence dans lequel l'unité de commande (8) ordonne à un affichage de l'appareil de cuisson d'afficher la valeur de température de référence (Tref) calculée.
- Appareil de cuisson, en particulier appareil de cuisson domestique, l'appareil de cuisson étant configuré pour mettre en œuvre un procédé selon l'une quelconque des revendications précédentes, de préférence four de cuisson (1) incluant au moins une chambre de traitement d'aliments (2), au moins un capteur de température pour détecter la température à l'intérieur de la chambre de traitement d'aliments (2), au moins un élément chauffant (3, 5, 6) pour fournir de l'énergie thermique dans la chambre de traitement d'aliments (2) et au moins une unité de commande (8) pour commander le fonctionnement du four de cuisson (1),
ou
de préférence plaque de cuisson incluant au moins un ustensile de cuisine définissant au moins une chambre de traitement d'aliments (2) qui est placée sur une zone de cuisson de la plaque de cuisson, au moins un capteur de température pour détecter la température à l'intérieur de la chambre de traitement d'aliments (2), au moins un élément chauffant (3, 5, 6) pour fournir de l'énergie thermique dans la chambre de traitement d'aliments (2) et au moins une unité de commande (8) pour commander le fonctionnement de la plaque de cuisson. - Appareil de cuisson selon la revendication 11, caractérisé en ce que le four de cuisson (1) ou la plaque de cuisson comprend une unité de commande électronique (8) incluant ou apte à réaliser au moins un ou deux ou une pluralité de programmes de cuisson automatique, en particulier dans lequel au moins un programme de cuisson automatique comprend le cycle de cuisson ayant la longueur prédéterminée.
