Abstract

La lipase immobilisée est positionnellement non spécifique et plus thermostable que celles précédemment connues. Elle est utile pour les processus d'hydrolyse d'esters, de synthèse d'esters et d'interestérification. Elle peut être produite par immobilisation d'une lipase à partir de Pseudomonas cepacia.
