Abstract
A low calorie margarine having a fat content between 19 and 38 % by weight is produced by preparing, in a first step and while stirring, a solution of 2-6% by weight starch and 0.02-0.05% by weight emulsifier in a liquid consisting of skimmed milk, buttermilk, whey or water, or a mixture thereof, whereupon the starch-emulsifier solution is left to stand and swell and mature, after which the matured starch-emulsifier solution is mixed with approx. 55-60% by weight of a protein concentrate of a milk product, and also with milking salts and taste- imparting substances in order to form an aqueous phase, with a fat phase, which is composed of fats and oils and an emulsifier, being prepared in a separate step, after which the aqueous phase is gradually emulsified in the fat phase in order directly to form the desired water-in- oil emulsion, whereupon the emulsion which has been formed in this way is pasteurised and cooled and, where appropriate, after final processing, packed under sealed and protecting moulds.
