Kuchen mit Baiserguß), mit Aprikotur behandeln und damit der Back­ ware Glanz und einen Schutzfilm verleihen, damit die Backware ihr ursprüngliches Aussehen beibehält. Unvorhergesehenerweise behielten nunmehr auch Früchte, die auf Backwaren offen liegen ihr ursprüngliches Aus­ sehen, d.h. sie werden nicht mehr matt und unansehnlich, sondern behalten ihre Frische und ihren Glanz, der sich nach dem Aprikoturvorgang einstellt.
