Abstract
Se proporcionan productos alimenticios no cárnicos que tienen el aspecto y la textura de carne cocida. Se proporcionan, además, métodos para producir tales productos alimenticios no cárnicos. En una modalidad, un método incluye mezclar ingredientes secos que comprenden proteínas vegetales con ingredientes húmedos que incluyen agua y/o aceite para formar una masa no cárnica; calentar la masa no cárnica bajo presión; mantener la presión mientras se transfiere la masa no cárnica calentada a un dispositivo de enfriamiento; y enfriar gradualmente la masa no cárnica calentada mientras que disminuye gradualmente la presión sobre la masa no cárnica caliente, para formar un producto alimenticio no cárnico. El mezclado puede realizarse mediante un mezclador discontinuo o continuo; el calentamiento puede realizarse mediante un dispositivo seleccionado del grupo que consiste en un emulsionante de alto cizallamiento, un intercambiador de calor y un calentador dieléctrico; y el enfriamiento gradual puede realizarse mediante un intercambiador de calor.
