Abstract
A newborn formula liquid milk and a preparation method thereof belong to the technical field of newborn formula food processing. In order to solve the problems of troublesome reconstitution, inconvenient carrying when people go out, non-uniform concentration, potential health and safety hazards and the like of the traditional newborn formula milk powder, the invention provides newborn formula liquid milk which is prepared from cow milk, skim milk, compound vegetable oil whey protein powder, desalted whey powder, lactose, compound vitamins, compound minerals, nucleotides, lactoferrin, beta-carotene, cod liver oil, soybean lecithin, monoglyceride and diglyceride fatty acid ester and water; the dry matter content of the newborn formula liquid milk is 10-15%. The newborn formula liquid milk provided by the invention does not need to be mixed, is uniform in concentration, safe and sanitary, is convenient to carry when going out, and is more in line with the modern life rhythm.

The invention relates to a newborn formula liquid milk and a preparation method thereof, belonging to the technical field of newborn formula food processing.
Background
The newborn baby is a baby from the birth of the fetus to the 28 th postnatal day after umbilical cord ligation, and is a special stage of the infancy stage due to obvious particularity in growth, development, diseases and the like, such as the fastest growth and development speed, high morbidity and mortality and the like in the stage. The ratio of whey protein to milk casein varies between the neonatal period and the infant period, and the fatty acid pattern also varies greatly, so that the feeding of the newborn is important. However, in the case of no breast milk, insufficient breast milk or incapability of breast feeding due to the physical condition of the mother, the newborn formula liquid milk is particularly important for the newborn.
Infant formula liquid milk is internationally recognized as one of the most advanced infant formula at present, represents a brand new feeding concept, is highly concerned by the industry since the market, but is relatively strange for most parents. Foreign enterprises such as the minister of Meizan, the Yapei, the love of Taimei, the cowshed and the like have own brands of infant formula liquid milk for a long time, and have been produced and sold for more than ten years, but domestic consumers have little knowledge of the brands. Currently, infant formula liquid milk is being produced and sold in many countries around the world, such as the united states, finland, etc., which are becoming new players in the infant formula market. The newborn formula liquid milk is a new pet in the infant formula food market, and mainly has the advantages that the newborn formula liquid milk does not need to be brewed, a lot of time is saved, the newborn formula liquid milk is attractive to office workers, the concentration of the reconstituted infant formula milk powder is uniform, feeding is convenient, the newborn formula liquid milk is suitable for being carried out, and the newborn formula liquid milk is safe and sanitary and is more beneficial to healthy growth of the newborn.
Therefore, the research and development of the liquid milk formula for the newborn is vital to the newborn stage with high morbidity and mortality and high growth and development speed, and the invention provides theoretical basis for production and technical guidance for production.

In order to solve the problems of troublesome reconstitution, inconvenient carrying, non-uniform concentration, potential health and safety hazards and the like of the traditional newborn formula milk powder, the invention provides a newborn formula liquid milk and a preparation method thereof, and the adopted technical scheme is as follows:
the invention aims to provide a newborn formula liquid milk, wherein each 1000L of the newborn formula liquid milk comprises the following components: 114.4-220.3 kg of raw milk, 39.16-114.4 kg of skim milk, 25.81-29.7 kg of compound vegetable oil, 6.5-7.5 kg of whey protein powder, 58.5-65 kg of desalted whey powder, 13.67-22.5 kg of lactose, 0.14-0.25 kg of compound vitamin, 0.2-0.5 kg of compound mineral, 0.09-0.1 kg of nucleotide, 0.05-0.13 kg of lactoferrin, 0.000375-0.0005 kg of beta-carotene, 2.8-3L of cod liver oil, 0.5-0.52 kg of soybean lecithin and 0.3-0.5 kg of mono-diglycerol fatty acid ester; the dry matter content of the newborn formula liquid milk is 10-15%.

The invention also provides a preparation method of the newborn formula liquid milk, which comprises the following steps:
(1) filtering raw milk;
(2) adding the filtered raw milk, skim milk, whey protein powder, desalted whey powder, lactose, compound mineral nucleotide and lactoferrin into distilled water, and preheating to 70-90 ℃ to obtain a water-soluble ingredient;
(3) adding compound vitamins, beta-carotene, soybean lecithin, cod liver oil and mono-diglycerol fatty acid ester into compound vegetable oil, and heating to 60-80 ℃ for dissolving to obtain a fat-soluble ingredient;
(4) mixing the water-soluble ingredients in the step (2) and the fat-soluble ingredients in the step (3) and fixing the volume;
(5) homogenizing the material with constant volume in the step (4) at high pressure, wherein the homogenizing pressure is 25-40 MPa;
(6) and then carrying out high-pressure sterilization at the temperature of 105-110 ℃ for 8-10 min, and cooling to obtain a finished product.
Further, the pressure for homogenizing under high pressure in the step (5) is 30 MPa.
Further defined, the autoclaving conditions of step (6) are: the temperature is 105 ℃ and the time is 8 min.
Further defined, the autoclaving in step (6) is in-vial sterilization.
Further defined, the preheating temperature in the step (2) is 85 ℃.
Further defined, the heating temperature in the step (2) is 80 ℃.
The invention has the beneficial effects that:
1. the liquid milk with the formula for the newborn does not need to be mixed, and is convenient to eat, uniform in concentration, sanitary and safe compared with the traditional milk powder with the formula for the newborn.
2. The ratio of the whey protein to the casein in the liquid milk in the formula of the newborn is 1.5-2.5:1, so that the burden of the kidney is reduced, and the liquid milk is beneficial to absorption by the newborn.
3. The skim milk is added into the liquid milk in the formula of the newborn provided by the invention to replace the traditional skim milk powder, so that the skim milk retains more original nutrient substances in the milk compared with the skim milk powder.
4. The liquid milk in the formula for the newborn is added with the skim milk and is filled with the compound vegetable oil, so that the proportion of healthier saturated fatty acid and unsaturated fatty acid is ensured, the digestion and absorption are promoted, and the constipation of the newborn is reduced.
5. The liquid milk in the formula for the newborn is added with nucleotide to promote the growth of gastrointestinal tracts and improve the immunity.
6. The liquid milk of the formula for the newborn is added with the lactoferrin, and the lactoferrin can regulate the running and storage of iron ions in a body, promote the proliferation of red blood cells, promote the growth of bones, promote the proliferation and differentiation of epithelial cells of small intestines and regulate the immune function of an organism.
7. The liquid milk in the formula for the newborn is added with the beta-carotene, so that intestinal peristalsis of the newborn is promoted, constipation is reduced, and immunity of an organism is enhanced.
8. The cod liver oil is added into the liquid milk in the formula for the neonate, and the liquid milk is rich in vitamin A, vitamin D and unsaturated fatty acid, wherein the ratio of the vitamin A to the vitamin D is 10:1, nutrient substances in raw materials are not damaged, the liquid milk is beneficial to digestive absorption of the neonate, and the immunity is improved.
9. According to the invention, an autoclave is used for in-bottle sterilization, the sterilization temperature is 105-110 ℃, the sterilization time is 8-10 min, the sterilization method is lower than the traditional in-bottle sterilization temperature, the sterilization time is shortened, and more nutritional ingredients of the liquid milk in the formula of the newborn are kept under the condition of ensuring safety.

The present invention will be further described with reference to the following specific examples, but the present invention is not limited to these examples.
The main raw materials and experimental equipment used in the following examples can be purchased from commercial sources, if not specifically indicated:

The mass ratio of whey protein contained in raw milk and skim milk to casein contained in the raw milk and skim milk is 1.5-2.5: 1.
(2) Experimental equipment: an electromagnetic oven, a milk fat separator, a thermometer, an electronic analytical balance, a stirrer, a homogenizer and an autoclave.
The newborn formula liquid milk of the present invention and the preparation method thereof are described in detail below.
Example 1. preparation of newborn formula liquid milk.
The embodiment provides a newborn formula liquid milk, wherein each 1000L of the formula liquid milk is prepared from the following raw materials in parts by weight: 114.4kg of fresh raw milk, 114.4kg of skim milk, 29.7kg of compound vegetable oil, 6.5kg of whey protein powder, 58.5kg of desalted whey powder, 13.67kg of lactose, 0.14kg of compound vitamin, 0.2kg of compound mineral substance, 0.09kg of nucleotide, 0.05kg of lactoferrin, 0.000375kg of beta-carotene, 2.8L of cod liver oil, 0.5kg of soybean lecithin, 0.3kg of monoglyceride and diglyceride fatty acid ester, and the dry matter content of the liquid milk of the newborn formula is 13.95%.
The preparation method of the newborn formula liquid milk comprises the following steps:
(1) filtering fresh raw milk: filtering fresh raw milk by using double-layer gauze, and filtering out some impurities;
(2) adding the filtered fresh raw milk, skim milk, whey protein powder, desalted whey powder, lactose, compound mineral substances, nucleotide and lactoferrin into distilled water, and preheating to 85 ℃ to obtain a water-soluble ingredient;
(3) adding compound vitamins, beta-carotene, soybean lecithin, cod liver oil and mono-diglycerol fatty acid ester into compound vegetable oil, heating in water bath to 80 ℃ to completely dissolve the compound vegetable oil to obtain a fat-soluble ingredient;
(4) mixing the water-soluble ingredients obtained in the step (2) and the fat-soluble ingredients obtained in the step (3), fixing the volume, and uniformly stirring by using a force-increasing stirrer;
(5) homogenizing the material with constant volume under high pressure of 30 MPa;
(6) and (3) filling the homogenized material into a glass bottle, tightly covering the glass bottle, and finally sterilizing in an autoclave at the sterilization temperature of 105 ℃ for 8 min.
The liquid milk with the formula for the neonate prepared by the embodiment can meet the nutritional requirements of the neonate, can be directly drunk without being mixed, has good uniformity, is safe and sanitary, and is beneficial to digestive absorption and brain nerve development of the neonate.
Example 2 this example differs from example 1 in that: every 1000L of formula liquid milk is prepared from the following raw materials by weight: 165kg of fresh raw milk, 72kg of skim milk, 27.8kg of compound vegetable oil, 7.0kg of whey protein powder, 61.8Kgkg of desalted whey powder, 18.08kg of lactose, 0.19kg of compound vitamin, 0.25kg of compound mineral, 0.09kg of nucleotide, 0.1kg of lactoferrin, 0.0004kg of beta-carotene, 2.9L of cod liver oil, 0.5kg of soybean lecithin and 0.4kg of monoglyceride and diglyceride fatty acid ester. The preparation method is the same as example 1.
The liquid milk with the formula for the neonate prepared by the embodiment can meet the nutritional requirements of the neonate, can be directly drunk without being mixed, has good uniformity, is safe and sanitary, and is beneficial to digestive absorption and brain nerve development of the neonate.
Example 3 this example differs from example 1 in that: every 1000L of formula liquid milk is prepared from the following raw materials by weight: 220.3kg of fresh raw milk, 39.16kg of skim milk, 25.81kg of compound vegetable oil, 6.5kg of whey protein powder, 59kg of desalted whey powder, 13.67kg of lactose, 0.14kg of compound vitamin, 0.2kg of compound mineral, 0.09kg of nucleotide, 0.05kg of lactoferrin, 0.000375kg of beta-carotene, 2.8L of cod liver oil, 0.5kg of soybean lecithin and 0.5kg of monoglyceride and diglyceride fatty acid ester. The preparation method is the same as example 1.
The liquid milk with the formula for the neonate prepared by the embodiment can meet the nutritional requirements of the neonate, can be directly drunk without being mixed, has good uniformity, is safe and sanitary, and is beneficial to digestive absorption and brain nerve development of the neonate.
Example 4. example 1 was repeated, differing from example 1 in that the pressure for high-pressure homogenization in the liquid milk production process was 25MPa, the temperature for autoclaving was 110 c, and the time was 8 min.
Example 5. example 1 was repeated, differing from example 1 in that the pressure for high-pressure homogenization in the liquid milk production process was 40MPa, and the temperature for autoclaving was 105 c for 10 min.
To demonstrate the effects that can be obtained by the present invention, the following experiments were carried out:
1. sensory evaluation and storage experiments were conducted using the newborn formula liquid milk prepared in examples 1 to 3 to show that the newborn formula liquid milk has good homogeneity, a creamy flavor, and good storage stability.
The newborn formula liquid milk prepared in the following examples 1 to 3 was expressed in the experiment as a low dose group (added amount of raw milk is 114.4kg/1000L), a medium dose group (added amount of raw milk is 165kg/1000L), and a high dose group (added amount of raw milk is 220.3 kg/1000L); examples 4-5 the resulting newborn formula liquid milk prepared was expressed in the experimental group as a low pressure homogenization group (homogenization pressure of 25MPa) and a high pressure homogenization group (homogenization pressure of 40MPa), respectively.
1) Sensory evaluation: selecting 10 professionals with dairy product expertise and receiving sensory evaluation training for sensory evaluation. The grading standard comprises taste, smell, tissue state and color, and the proportion of the taste, the smell, the tissue state and the color is respectively 60, 30 and 10 for sensory grading.

According to table 2, it can be found that when fresh raw milk is added in the high dose group, the sensory evaluation score of the liquid milk in the formula of the newborn baby is 98 points at most, and the color, the taste and the tissue state of the product are more suitable for the consumers and the newborn babies compared with the low dose group and the high dose group.

According to table 3, it can be found that when the homogenization pressure is high pressure homogenization, the sensory evaluation score of the liquid milk in the newborn formula is 95 points at the maximum, and the color and the tissue state of the product are more suitable for the consumers and the newborns compared with the low pressure homogenization group.
2) Storage experiment
(1) Experimental Material
Experimental materials: selecting low-dose group, medium-dose group, high-dose group, low-pressure homogenizing group, high-pressure homogenizing group, respectively 40 bottles, storing at 4 deg.C, 25 deg.C, 40 deg.C, indoor relative humidity RH ═ 32% + -2%, storing for 180 days, and randomly selecting one bottle every 30 days for sensory evaluation.
Low dose group-example 1 (1000L): 114.4kg of fresh raw milk, 114.4kg of skim milk, 29.7kg of compound vegetable oil, 6.5kg of whey protein powder, 58.5kg of desalted whey powder, 13.67kg of lactose, 0.14kg of compound vitamin, 0.2kg of compound mineral substance, 0.09kg of nucleotide, 0.05kg of lactoferrin, 0.000375kg of beta-carotene, 2.8L of cod liver oil, 0.5kg of soybean lecithin and 0.3kg of monoglyceride and diglyceride fatty acid ester.
Medium dose group-example 2 (1000L): 165Kg of fresh raw milk, 72Kg of skim milk, 27.8Kg of compound vegetable oil, 7.0Kg of whey protein powder, 61.8Kg of desalted whey powder, 18.08Kg of lactose, 0.19Kg of compound vitamin, 0.25Kg of compound mineral, 0.09Kg of nucleotide, 0.1Kg of lactoferrin, 0.0004Kg of beta-carotene, 2.9L of cod liver oil, 0.5Kg of soybean lecithin and 0.4Kg of monoglyceride and diglyceride fatty acid ester.
High dose group-example 3 (1000L): 220.3kg of fresh raw milk, 39.16kg of skim milk, 25.81kg of compound vegetable oil, 6.5kg of whey protein powder, 59kg of desalted whey powder, 13.67kg of lactose, 0.14kg of compound vitamin, 0.2kg of compound mineral, 0.09kg of nucleotide, 0.05kg of lactoferrin, 0.000375kg of beta-carotene, 2.8L of cod liver oil, 0.5kg of soybean lecithin and 0.5kg of monoglyceride and diglyceride fatty acid ester.
(2) Experimental methods and procedures
A low dose group; middle dose group; high dose group; fourthly, homogenizing under low pressure; high pressure homogenizing group with 30 bottles each. Each group of newborn formula liquid milk was randomly selected from 10 bottles, stored at 4 deg.C, 25 deg.C, and 40 deg.C for 180 days, and subjected to sensory evaluation, color difference and pH every 30 days. The sensory evaluation methods and criteria were as described above.

As can be seen from table 4, the sensory scores of the high-dose group, the medium-dose group and the low-dose group were less changed, the sensory score of the high-pressure homogenized group was the smallest, and the sensory score of the low-pressure homogenized group was higher when stored at 4 ℃ for 180 days. As can be seen from Table 5, the sensory scores of the three dose groups were significantly changed when stored at 25 ℃ for 180 days, and the sensory score of the high pressure homogenized group was higher than that of the low pressure homogenized group, while the sensory score of the high pressure homogenized group was minimal. As can be seen from table 6, the sensory scores of the three dose groups varied most when stored at 40 ℃, decreased as the storage time increased, the sensory score of the high dose group was the highest, and the sensory score of the high pressure homogenized group was higher than that of the low pressure homogenized group. As is clear from tables 4, 5 and 6, the sensory scores were less changed when stored at 4 ℃ and 25 ℃ for 180 days, while the sensory scores were greatly reduced when stored at 40 ℃. Therefore, storage at 25 ℃ can be selected, which is very little different from storage at 4 ℃ and reduces costs.
Claims (10)
1. The newborn formula liquid milk is characterized in that the raw materials of every 1000L of the newborn formula liquid milk comprise the following components: 114.4-220.3 kg of raw milk, 39.16-114.4 kg of skim milk, 25.81-29.7 kg of compound vegetable oil, 6.5-7.5 kg of whey protein powder, 58.5-65 kg of desalted whey powder, 13.67-22.5 kg of lactose, 0.14-0.25 kg of compound vitamin, 0.2-0.5 kg of compound mineral, 0.09-0.1 kg of nucleotide, 0.05-0.13 kg of lactoferrin, 0.000375-0.0005 kg of beta-carotene, 2.8-3L of cod liver oil, 0.5-0.52 kg of soybean lecithin and 0.3-0.5 kg of mono-diglycerol fatty acid ester; the dry matter content of the liquid milk in the formula of the newborn is 10-15%.

The newborn formula liquid milk according to claim 1, characterized in that the compounded vegetable oil consists of soybean oil, corn oil, palm oil, linseed oil and sunflower oil; wherein the mass ratio of the soybean oil to the corn oil to the palm oil to the linseed oil to the sunflower seed oil is 6:35:23:18: 15.

The newborn formula liquid milk according to claim 1, wherein the vitamin complex is vitamin A, vitamin D, vitamin K, vitamin E, vitamin B1Vitamin B2Vitamin B6Vitamin B12Nicotinamide, folic acid, pantothenic acid, vitamin C, biotin and carnitine; wherein, vitamin A, vitamin D, vitamin K, vitamin E, vitamin B1Vitamin B2Vitamin B6Vitamin B12The mass ratio of nicotinamide, folic acid, pantothenic acid, vitamin C, biotin and carnitine is 7.5:04:0.04:60:2:8:6:0.006:40:1.3:34:800:100: 2400.

The newborn formula liquid milk according to claim 1, wherein the compound minerals are composed of sodium, potassium, copper, magnesium, iron, zinc, manganese, calcium, phosphorus, iodine, chlorine and selenium; wherein the mass ratio of sodium, potassium, copper, magnesium, iron, zinc, manganese, calcium, phosphorus, iodine, chlorine and selenium is 3841:8213:5.71:859:114:111:0.43:7430:4290:1.86:82130: 0.17.

The newborn formula liquid milk according to claim 1, wherein the nucleotides consist of disodium 5 '-uridylate, adenosine 5' -monophosphate, disodium 5 '-inosinate, and disodium 5' -guanylate; wherein the mass ratio of the disodium 5 '-uridylate, the adenosine 5' -monophosphate, the disodium 5 '-inosinate and the disodium 5' -guanylate is 1:2:1: 2.

7. The newborn formula liquid milk according to claim 1, wherein the mass ratio of whey protein contained to casein contained in the raw milk and skim milk is 1.5-2.5: 1.
8. The method for preparing a newborn formula liquid milk according to any one of claims 1 to 7, comprising the steps of:
(1) filtering raw milk;
(2) adding the filtered raw milk, skim milk, whey protein powder, desalted whey powder, lactose, compound mineral substances, nucleotide and lactoferrin into distilled water, and preheating to 70-90 ℃ to obtain a water-soluble ingredient;
(3) adding compound vitamins, beta-carotene, soybean lecithin, cod liver oil and mono-diglycerol fatty acid ester into compound vegetable oil, and heating to 60-80 ℃ for dissolving to obtain a fat-soluble ingredient;
(4) mixing the water-soluble ingredients in the step (2) and the fat-soluble ingredients in the step (3) and fixing the volume;
(5) homogenizing the material with constant volume in the step (4) at high pressure, wherein the homogenizing pressure is 25-40 Mpa;
(6) and then carrying out high-pressure sterilization at the temperature of 105-110 ℃ for 8-10 min, and cooling to obtain a finished product.
9. The method according to claim 8, wherein the high-pressure homogenization pressure in the step (5) is 30 MPa.
10. The method of claim 8, wherein the autoclaving conditions of step (6) are: the temperature is 105 ℃ and the time is 8 min.
